HELPING HANDS

Good evening darlings! How are you doing this frosty night? I am so sorry on my tardiness but I had a bunch of things I HAD to attend to today because we are expecting a hard freeze tonight and for the next 3 nights. I had to get some clothes washed, essential groceries bought, bills paid, and go help my mom (make sure her propane tanks were filled, etc. Then I had to help a little kitty who was wandering around stuck in a ravioli can! I ended up bringing it home and I'm gonna call him Ravioli LMAO! Needless to say, its been a busy day. Plus this cold is killing my joints and so I am in all my braces and STILL in pain. So please bear with me.

So tell me... did you miss me? LOL! I missed you guys. I actually was thinking about ya'll all day saying "oh they are gonna worry, oh I can blog about this or that, oh I gotta get this done". I was listening to the Houston news and how their new mayor, Ms. Parker, has been trying to open warming shelters and get all the city's homeless inside so they don't freeze to death. And I have heard other good deed stories all day. It warmed my heart and I was proud of humanity! I think they have a great mayor and will have alot of good times ahead of them!

So as much of the pipes are wrapped as I can get to, there is plenty of AntiFreeze worked through our vehicles, there is a makeshift shelter for all the critters that come around outside, food is bought in case we get "iced in" and LOL my kids are even making more blankets from the fleece we went and bought at JoAnn's this afternoon! They crack me up... I told you they had blanket fetishes!! So I think we are good to go the next few days. Just waiting to hear if they are having school tomorrow... in a way I want them to go (for my sanity) but I don't want them too if it ices up cause I don't want to have to drive in that! Anyways, so all the preparations are made... so what's for dinner? Well, when we got home, I made a big pot of jambalaya, a couple of large roasts (which heating the oven also heats the house up LOL) smothered with gravy, and a big pot of chicken noodle soup with some grilled cheese sandwiches! So there is no real dinner recipe to share for tonight. However I found one I am gonna try that seemed pretty by the picture. I'll share that one with you and we can learn about it together ok? Cool...



Pumpkin Bowl with Vegetables and Sausage

Ingredients

1 whole (10 pound) Cinderella pumpkin
1 (16 ounce) package kielbasa sausage, sliced into 1/2 inch pieces
3 carrots, peeled and sliced
2 celery ribs, chopped
1 large onion, peeled and chopped
3 cloves garlic - minced, or amount to taste
2 cups parsnips, peeled and cubed (optional)
2 cups rutabagas, peeled and cubed (optional)
2 cups cabbage, coarsely chopped (optional)
1 green bell pepper, chopped
1 red bell pepper, chopped
1 head broccoli, cut into florets
2 zucchini, cut into chunks
1 1/2 cups canned or frozen corn
2 (13.75 ounce) cans chicken broth
2 cups cooked white or brown rice (optional)
1/2 cup chopped fresh parsley
1/2 teaspoon red pepper flakes, or to taste
1/2 (1.25 ounce) envelope dry onion soup mix
1/2 (1 ounce) packet dried Italian seasoning
salt and ground black pepper to taste

Directions

Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with foil.
Cut around the top of the pumpkin to make a lid. Use a large metal spoon to scoop out the inside membrane and seeds.

Place the pumpkin on the prepared baking sheet, and place in the preheated oven. Cook for 1 hour, then lower heat to 325 degrees F (165 degrees C).

Meanwhile, place the sausage in a deep pot over medium-high heat. Cook until evenly browned, turning frequently, 10 to 12 minutes. Stir in the carrots, celery, onion, and garlic; cook and stir until translucent and tender, about 5 minutes. If desired, stir in the parsnips, rutabaga, and/or the cabbage; cook until the vegetables are almost ender, about 5 minutes. Add the red and green peppers, broccoli, zucchini, and corn. Pour in the chicken broth, add the rice, and cook 5 minutes more. Stir in the parsley, red pepper flakes, onion soup mix, and Italian seasoning. Season to taste with salt and pepper.

Keeping the pumpkin on the baking sheet, spoon the vegetable-sausage mixture into the pumpkin, and replace the lid. Loosely cover the pumpkin with aluminum foil.

Cook the pumpkin in the preheated oven until the flesh is tender, about 4 hours. Scoop some of the pumpkin flesh away from the sides to combine with the vegetable mixture. To serve, place the pumpkin on a serving platter, and remove the lid to ladle out the contents.

Well kids, I'm really tired and hurting, so I think I am gonna go take my meds and lay down. Morning my sweets... sorry I am a bit late this morning. I had to run to the tax office and purchase the new registration tags for my car. But I am here now LOL so don't fret! I see we have another follower this morning! Welcome! Come in and stay awhile. Its another cold bitter morning here in Texas and the weatherman assures us, it will be the warmest day of the next week today... oh gee thanks. I'm thrilled now to hear that! NOT!

Ok, so I've been in a weird mood lately and so this morning I decided to check out the "Odd News" on Yahoo. Boy was I in for it... Here's some of the "interesting" headlines...

Now seriously??!! What kind of world do these people live in when they want to act all crazy doing stupid stuff like this?? Now I have to admit, I did chuckle over in the Inlaw story vs. jail time LMAO! But the others were just like OMG are you serious?? And people wonder why I don't watch the news and such! I choose to have a select niavite'... sometimes ignorance IS bliss! LOL... ok so enough with the foolishness, tell me how is your year is going so far? I know, its only 6 days in, but are you getting the feel yet?? I'm getting the feel that people are getting desperate these days because some things are so bad right now... finances, unemployment rates, etc. and that we need to practice more frugality and self control. We need to get back to the old ways of life maybe for a bit til the world cleans itself up some- at least enough to be tolerable. Bartering, sewing, pantry cooking, canning, gardening, etc. Why don't people understand that by being more self sufficient, they won't suffer as much!? Well, I'm gonna do it! I'm gonna start a patio garden (the landlord won't let me plant in the ground cause he's an idiot). I already sew, cook, and can my own jellies, salsas, and veggies, etc. So now I have to figure out a way to cut more bills and live just about free... I think it CAN be done and I am gonna make it another one of my 2010 goals!

Now lets talk some munchies cause I'm starving! I could go for a big huge country breakfast, but I'm not going to. I have some jalapeno & Cheddar venison sausage I am wrapping in biscuits and making homemade pigs-n-a-blanket or kolaches (depending on where you are from!) for breakfast/brunch along with a tall glass of OJ! YUM! But dinner... hmmm... dinner. I think some 9x13 pans of good old Hurry Up Chicken Pot Pie... WHAT??!? You've never heard of it? OMG its delish and they clean the pans every time! Its a recipe from a woman I admire very much... Mrs. Paula Deen. Its a HUGE hit around here, so let me share with you...



Hurry Up Chicken Pot Pie

Ingredients

2 cups chopped cooked chicken breast
2 hard-boiled eggs, sliced
1/2 cup thinly sliced carrots
1/2 cup frozen green peas
1 (10 3/4-ounce) can cream of chicken soup
1 cup chicken broth
Salt and pepper, optional
1 1/2 cups instant biscuit mix
1 cup milk
1 stick melted butter

Directions

Preheat oven to 350 degrees F.

In a greased 2-quart casserole, layer the chicken, eggs, carrots, and peas. Mix the soup, chicken broth, and season with salt and pepper, if desired. Pour over the layers. Stir together the biscuit mix and milk, and pour this over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30 to 40 minutes.

ORGANIZING YOUR LIFE

Good morning sunshines! How are you this icy cold January morning? I’m pretty frozen right now… this must be how the cavemen felt during the freakin' ice age!! Got the kids off to school and the crocks warmed and working already! Gotta go pick up my son’s medicine prescriptions, but that’s pretty much it for the day. I have a strong suspicion I am getting sick and my health has really been aggravated by the cold weather… hense… mom’s gonna go back to bed as soon as she can! So did you check out yesterday’s blog? I think it’s a cool prize and if I were sitting out there reading this instead of writing it, you bet I would enter LOL! Make sure you become a registered follower so that you can be eligible!

Alright, many of you know that I don’t really watch a lot of television or stuff like that. So I get my news and such mainly online and the radio in the car. Well I was reading this one article about organizing your life and since organizing the house and such is one of my goals for 2010, I figured I’d see what they had to say. It was called “The A to Z guide to Organizing” and was featured on Yahoo’s Shine yesterday morning. Many of them were obvious ones, but there were a few that made me say “Hey not bad idea there peeps!” And I consider myself a pretty good organizer LOL. But just in case getting organized is one of your goals (or resolutions or whatnot LOL) for this upcoming year, I’ll share the ones that made me think with you…

A: Assign a Color Scheme
Banish cries of “It’s not mine!” by color-coding your kids’ gear all through the house. Stick to a signature shade for each child’s toothbrush, bath towel and backpack, so you can tell at a glance which stuff belongs to which kid. Buy a colored bin for each child, too, to use as a handy drop spot for stray toys and clothes. Each night before bed, have your kids empty their own bin, returning items to their rightful places.


I: Institute an All-In-One Rule
Bring order to a messy linen closet by putting folded sets of bed linens inside one of the pillowcases. No more searching for the flat sheet that matches the fitted sheet: Just grab a complete set and go.
- I’m SOO doing this! And if I have any unmatching odd pillowcases, sheets, etc… they will either find other uses or be gone!

U: Unclutter with Color
To make organizing less painful, place colorful dot stickers or shipping tags on things you’re not sure you’re ready to part with. If you wear the shirt, use the breadmaker, or play the board game sometime in the next six months, peel off the sticker or tag. After six months, anything that’s still dotted or tagged goes into your giveaway box.


Z: Zip It Up
Keep small, easy-to-lose items (craft supplies, game pieces, itsy-bitsy toys, etc.) from going MIA permanently by putting them into a zippered mesh bag each time you find one. The zipper keeps them safe, the mesh keeps them visible. Thread a ribbon through the zipper pull and hang the bag on a hook in an accessible spot. No more “Mom, I can’t find…!
”- Maybe not mesh bags but I am thinking of making some clear vinyl zippered bags to hang stuff! That would be cool!

Then there are some of my personal favorites that we already implicate in our house, but maybe you can too if you don’t already!

H: Hang It Up
“I’m a mom of four and my mudroom looked like a disaster area all the time,” says Christine Vick, cofounder of the organizing website StoreandStyle.com. “So I filled a whole wall with bathrobe hooks. They make it much easier for my kids to store their coats in the winter, and their swimsuits and beach towels in the summer.”-
we have hooks ALL over the house that I got one day at the Home Depot and Just started hanging! I also bought some of those unfinished wooden peg/coat racks at Hobby Lobby and covered them in fabric to match the kids’ room décor and hung them up there too!

L: Streamline Your Laundry
“For 70 percent of the women I work with, laundry is the biggest problem,” says Ricks. “They just don’t have the habit of finishing the job.” Instead of doing marathon sessions once or twice a week—and never getting through the whole pile because, let’s face it, who wants to wash all those clothes?—designate different days for different kinds of laundry: whites, darks, towels, sheets. A massive pileup is easier to tackle when you break it down into manageable chunks, and knowing exactly how much you have to get done that day helps you stay on track.


M: Maximize Your Minutes
Got a few seconds to spare? Don’t just stand there—declutter. Keep a list of super-quick organizing tasks, then tackle one when you’re, say, waiting for water to boil. Use the time to chuck expired food from the fridge. Minutes here and there can add up to a tidier house.


N: Build a Household Notebook
Restyle a three-ring binder into command central. Divvy it up with tabbed categories such as Contacts, Food and Activities. Then stock it with class phone lists, school lunch schedules, blank calendars and more so everything you need is at your fingertips. Even easier, download cute printable forms, like a weekly chore sheet or a menu planner-
we have 2 big dry erase marker boards at the front wall of the house next to the front door. One is a calendar and I make sure it is kept up daily with band and football practices, doctor visits, etc. So everyone knows what’s going on and who needs to be where when!

P: Put Up a Pegboard
“They’re great for garages, but also work well in storage closets,” says professional organizer Stephanie Shalofsky, owner of the Organizing Zone in New York City. “You can hang up things like a stepladder, dusters and mops.
”- Works great everywhere! Hang them in your kitchen like Julia Childs did for her pots and pans and utensils, in the kids rooms for wall organizing, etc. We have them in the kitchen, my bedroom, and the kids rooms!

S: Stash it Underneath
You’ve heard about stowing seasonal clothes like sweaters in slim bins under the bed. Don’t stop there. Also use plastic storage bags that you can vacuum-suction flat and slide them beneath footed sofas and bookcases.


T: Supersize Your Trash Can
The smaller it is, the less likely you are to throw things away. Buy a behemoth of a wastebasket and you’ll purge more freely.-
we did this a long LONG time ago and STILL Have to take it out almost daily LOL! BUT a word of caution… be careful cause if you pile it too heavy, you either rip the bag or can’t get it out of the can! Yes, I made that mistake (and still do occasionally LOL)!

W: Waste Not, Want Not
Kitchen storage doesn’t have to stay in the kitchen: Look for ways to repurpose seldom-used items that are taking up space. Turn a spice rack into a clever spot to corral toiletries in the bathroom. Convert a utensil holder into an art supply organizer in your kid’s desk drawer.


X: Add Extra Storage
Go to extremes to find more space—use areas near the floor and ceiling. Install wooden shelving and brackets along one wall of your living room, about a foot beneath the ceiling. It’s the perfect place for an overflow of books. Then go low and line the dead zone at the bottom of a hall closet with baskets to stow extra blankets.-
We put up shelves in the pantry and bathrooms and a bunch of other places! I love shelves! I also bought a couple of those single drawer cabinets at the Walmart and put them side by side and use them as a coffee table! With a long glass top and a pretty table runner, you can’t even tell!

OK, so now you know some of the things I do to keep my house up and running with the tons of people who come through daily! Hope you can achieve your goals in 2010! Now food… some of you out there seem to think my intention with all these recipes is to fatten you up LOL! That’s not it at all… my intention was to share a bit of my home cookin’ with you. WAIT… OMG you’re right! I am gonna make you fat! LOL… shoot my husband has gained about 100 pounds since marrying me and the DS18 claims to have put on 30 pounds last year alone… hmmmm… maybe we should research some HEALTHIER recipes LMAO! NAHHH… I’m fluffy… and I like it! I take pride in knowing that I won’t break a bone when I fall down or freeze and blow away in the wind! LMAO. Not that being slender is a bad thing… by no means am I saying that! My DD15 is very slender and tall… and I think its great. My point in all this rambling I guess is love the skin you’re in! For me… fluff’s the stuff baby! LOL! Now let’s get down to some delish meals that will make your mouth water. Here is one you can make after Halloween with those carved leftover pumpkins you normally would just throw away. I make it and freeze it for enjoying during the cold winter months.



Hearty Pumpkin Stew

Ingredients

1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
2 pounds beef stew meat, cut into 1 inch cubes
2 tablespoons vegetable oil
2 tablespoons butter or margarine
1 large onion, chopped
2 cloves garlic cloves, minced
3 medium carrots, thinly sliced
2 celery ribs, thinly sliced
4 cups water
1 bay leaf
1 teaspoon beef bouillon granules
1 teaspoon dried thyme
3 cups peeled, cubed pumpkin
1 cup cubed potato
1 large sweet potato, chopped
2/3 c. of wine
1/2 teaspoon parley
1/2 teaspoon onion powder
1/2 teaspoon basil

Directions

In a large resealable plastic bag, combine the flour, salt and 1/4 teaspoon pepper. Add meat, a few pieces at a time, and shake to coat. In a Dutch oven, brown meat in oil and butter. Add onion and garlic; cook and stir for 2-3 minutes. Add meat mixture and all remaining ingredients to slow cooker. Cover and cook on high for about 6 hours.

Stir in pumpkin. Cover and simmer for 20-25 minutes or until pumpkin is tender. Discard bay leaves.

For dessert I found this recipe that just sounds heavenly! It’s for Caramel Apple Crumble Pie. I’ve had a sweet tooth since yesterday and this just looked divine!



Caramel Apple Crumble Pie

Ingredients

FOR THE CRUMBLE TOPPING
1 cup rolled oats
1/2 cup brown sugar
1/4 cup all-purpose flour
1/2 cup slivered almonds
1/4 teaspoon ground cinnamon
1/4 cup butter, cubed

FOR THE PIE
1 (9 inch) single pie crust
6 apples - peeled, cored, and thinly sliced
2 tablespoons lemon juice
1 tablespoon all-purpose flour
1/2 cup brown sugar
2 teaspoons ground cinnamon
1/2 cup caramel sauce
1 teaspoon cornstarch

Directions

1. Preheat an oven to 350 degrees F (175 degrees C).

2. To make the topping, combine the oats, 1/2 cup brown sugar, 1/4 cup flour, slivered almonds, and 1/4 teaspoon cinnamon. Cut in the butter until the mixture resembles coarse crumbs; set aside.

3. Roll out the pie dough into a circle and transfer it to a 9-inch pie plate. Trim the pastry and crimp the edge. Toss the apples with the lemon juice in a bowl to prevent browning. Combine the 1 tablespoon flour, 1/2 cup brown sugar, and 2 teaspoons cinnamon; and cornstarch; toss with the apples to coat. Drizzle 1/4 cup of caramel sauce over the bottom of the pie shell. Add the spiced apple mixture; drizzle with remaining 1/4 cup of caramel sauce. Sprinkle the crumble topping evenly over the apples.

4. Bake the pie in the preheated oven for 50-60 minutes, or until the apples are tender and the crust is browned

SILENCE IS GOLDEN!! AND EERIE LOL!

Morning there youngsters! How you doing today? I am absolutely WONDERFUL! LOL… my kids are all quietly tucked away in their classrooms and I am all alone! Well, the hubs is in the back snoring his head off but over the years I have learned to tune him out LOL! I looked over the weather this morning and got a big shock… Its gonna get below freezing by the end of the week (YUK!). Man oh man is this gonna be an interesting time. Gonna have to get gloves and coats and hats and tons of blankets to keep everyone warm! Don’t get me wrong, I like it cold but this is a little much! Anyway, so here I sit eating my breakfast in the silence (and man is it wonderful!) and I want to give a big public CONGRATULATIONS to Susan and any of my other readers expecting a new addition in the New Year!



Ok gang… I told you… a New Year held some exciting things in store! The first thing for the New Year is a give-away. Yes you heard right! I am always preaching about my crock pots and how much I love them… so on February 1, 2010 I will be giving one lucky follower a brand new Crock Pot 7qt. Slow cooker! That’s big enough to feed 9 people or make freezable or leftover meals. Its an awesome item! Now what you have to do is- 1. Be a registered follower to be eligible. 2. Oh, I got more “casual” pictures for you… hubs is getting a kick out of this. I always fight to have pics taken, but someone wanted “action” shots LOL of me in the kitchen. So here you have me fixing lunch and prepping some of the dinner pots yesterday. Be nice as I was in pain and cold and tired LOL!

New York strip steak and Shrimp Skewers for lunch YUMMY!! Ain't it pretty?? LOL

Ok I wanted to share a recipe I found with you from a book from (what I call) my PIL collection… Publications International Ltd. Series of books. This one I was browsing through is called the Campbell’s Slow Cooker Recipes. Keep in mind I have never tried this, but the picture was so pretty and it looked absolutely delish! So if you try this one out before I do, let me know how it worked out for you!

Campbell’s Chicken & Sausage Paella

1 pound skinless, boneless chicken thighs, cut into cubes
1 pound chorizo or andouille sausage, thinly sliced
2 cups uncooked regular long grain white rice
1 large red onion, chopped (about 1 cup)
3 cups Campbell’s condensed Chicken Broth
1 can (10.75 oz.) Campbell’s Condensed Tomato Soup
1 cup frozen peas, thawed
½ cup chopped Manzanella olives
2 tablespoons chopped Fresh Parsley

Directions:

1. Stir the chicken, sausage, rice, onion, broth, and soup into a 6qt. Slow cooker.

2. Cover and cook on LOW for 6 to 7 hours or HIGH for 4 to 5 hours or until the chicken is cooked through.

3. Stir in the peas and olives into the Slow Cooker. Cover and cook until the mixture is hot. Sprinkle with parsley.

As for tonight’s dinner in my house… I think that its gonna be clean out the fridge night cause everyone will be here and/or coming over and there is a ton of stuff in there (since I cook practically 24-7) that needs to go. Waste not want not! Not gonna put out too much over-effort cause I woke up not feeling good at all and it seems to be getting worse as the minutes go by. Gonna try to concentrate on a lot of sit down things today, and maybe get a bit of cleaning done! But mainly, today is about enjoying the peace & quiet! And let me tell ya, it’s only been about an hour, but like McDonalds… Ba da ba ba ba… I’M LOVIN’ IT! LMAO! So I’m outta here kids. Be watching for the days I say “its “COMMENT” day (NOT NOW… I’ll tell ya in the first paragraph of that day’s post LMAO I’ll dream up some more fancy fun things to share tomorrow… HUGS!

ARE YOU READY FOR SOME FOOTBALL!?

Hi there everybody. How are you doing this cold morning? I am well… the last day before the kids go back to school! YAY!!!!! I’m gonna dance a jig tomorrow LOL! Today is another multi-cooker day while I clean… I conquered the pile that was surrounding my desk and I found the floor! YAY for me! But I didn’t get any sewing or such done. I did make a couple of small trips to the store for mass stuff like sugar, flour, etc… things I buy in bulk and was just about out of until I could do the monthly cabinet inventory. And make the BIG trip LOL! Just wait till tax time! That’s gonna be a scary stock up run! I normally drop about $1K total! Oh and get this… I read my blog to the hubs yesterday morning and he called me a dork! OMG! How rude! And my kids… OMG they are so getting on each others’ nerves, and well quite frankly, I find it so funny! They are bickering like crazy this winter… probably because its been such a rainy one and they haven’t been able to get out and do much! This past 2 weeks has made me realize how I need to get some summer activities planned so they don’t drive me crazy! LOL. Don’t get me wrong… I love them very much… but they can really yank my crank! Its all about budgets… last summer we went to the Blue Bell Creamery and the Jersey Barnyard, which cost us maybe $100 for the whole day for all of us! Check out the Jersey Barnyard here! We did some local fun activities as well. I need to do some researching on what we can do cheap this summer… if ya got any ideas, let me know LOL! And if I find some before you, I’ll be sure to share! Look at these pics from the Creamery and Barnyard… they had fun LOL!

They have all kinds of stuff to do at the barnyard... feed calves, milk cows, the Hay Maze, the tractor ride... you name it! We had fun!

Ok so how many of you are into football? Got any parties planned? Well, football is HUGE around here (if ya haven’t already guessed)… high school, college, and NFL! Got my favorite college team, the Texas Longhorns, going to the bowl on the 7th (YAY) against Alabama… me and the hubs are at odds right now LOL! Then we have Superbowl on February 7th… YAY! Having a huge party here at the house on the big screen for that one! I would LOVE to see my Dallas Cowboys in this year… so I’m gonna pray to the sports gods that they get the chance LOL! We’ll have to see who the 2 are that will be going before I make my decision on who to root for…

Well, like I said, today is gonna be a multi-pot dinner with the no-fuss crockpots making my life simple yet again! I didn’t get around to the clam chowder or the hot & sour soup yesterday so I am gonna try to get to it today. I DID however make that Peasant Goulash and the gang ate the whole entire pan… I had 1 serving left! I also made the chicken & dumpings and the pulled pork. They ate well. So I’m gonna share the Goulash recipe with you today.



Peasant Goulash

Ingredients

2 teaspoons olive oil
1 pound of beef bottom round roast, cut into 1/2 inch cubes
4 onions, cut into thin slices
3 ounces button mushroom caps
1 cup fat free beef broth
1 can (14oz) stewed tomatoes
2 cloves garlic, minced
1 teaspoon cocoa
2 tablespoons paprika
1/2 teaspoon marjoram
1/4 teaspoon ground black pepper
1 teaspoon browning and seasoning sauce
8oz. Wide egg noodles

Directions

1. Heat the oil in a large non-stick skillet over medium high heat. Add the beef, onions, and mushrooms and saute, stirring occasionally, until the beef is lightly browned and the onions are translucent, 6 to 8 minutes.

2. Remove the beef mixture to the crockery pot. Pour the broth into the same skillet. Cook over medium heat, stirring and scrapping constantly for 2 minutes to deglaze the skillet. Pour into the beef mixture. Stir in the tomatoes, garlic, cocoa, paprika, marjoram, and pepper. Cover and cook on LOW or HIGH until the beef is very tender- 6-8 hours on LOW or 4-6 hours on HIGH. Stir in the browning sauce.

3. Cook the noodles according to package directions. Drain well and divide among 6 plates. Top with the beef mixture.

OK now for today’s meals… gonna try again to get around to the clam chowder and hot & sour soup. And I found the cutest little oyster mushrooms I might try adding to the Clam Chowder or the Hot & Sour too. See what happens LOL! In the crocks I am making slow cooker chicken taco soup, creamy tortellini soup, and some sweet & sour pork. The S&S pork will be served with rice. The tortellini soup with homemade garlic bread, and the taco soup with homemade tortilla chips, cheese, and sour cream. Oh and I got my shrimp I was drooling over the other recipe, so I am gonna marinate those bad boys and eat them for lunch! YAY! LOL… Since I’ve shared the soups in previous posts, lets share the pork today.



Slow Cooker Sweet & Sour Pork

Ingredients

2 tablespoons plus 1-1/2 teaspoons paprika
1-1/2 pounds boneless pork loin roast, cut into 1-inch strips
1 tablespoon canola oil
1 can (20 ounces) unsweetened pineapple chunks
1 medium onion, chopped
1 medium green pepper, chopped
1/4 cup cider vinegar
3 tablespoons brown sugar
3 tablespoons reduced-sodium soy sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
2 tablespoons cornstarch
1/4 cup cold water
Hot cooked rice, optional

Directions
1. Place paprika in a large resealable plastic bag. Add pork, a few pieces at a time, and shake to coat. In a nonstick skillet, brown pork in oil in batches over medium-high heat. Transfer to a 3-qt. slow cooker.

2. Drain pineapple, reserving juice; refrigerate the pineapple. Add the pineapple juice, onion, green pepper, vinegar, brown sugar, soy sauce, Worcestershire sauce and salt to slow cooker; mix well. Cover and cook on low for 6-8 hours or until meat is tender.

3. Combine cornstarch and water until smooth; stir into pork mixture. Add pineapple. Cover and cook 30 minutes longer or until sauce is thickened. Serve over rice if desired.

LAUGHTER CURES WHAT AILS YA!

Well a big Hi there and hello from Texas! It’s a very cold morning here and my hands feel like blocks of ice! I want to start off by thanking everyone for the comments both on here and in my email. A couple made me tear up and a couple made me chuckle. Either way, they all brought me joy! So thank you and keep leaving such great comments!

OK, so yesterday I told you I was gonna finish undecorating right? Well I did it… in record time no doubt! Everything is moved into storage and ya wanna know something? My dang living room echos! LMAO How is it I have never noticed this until now? LMAO even the kids said “Wow mom, it DOES echo in here” lol so I went around the rest of the afternoon acting like I was echoing at the Grand Canyon. LOL it was so funny and the kids were saying “Mom, you’re such a nerd!” OMG gee love you too butthead! LOL! I still have this one ugly pile of junk by my desk that thinks it has won but little does it know, I have a new plan of attack and it will surrender to me today! Mwahaha! LMAO (See what the cold does to your brains kiddies???)

Alright I’m hungry… what’s to eat today? WHAT?? You want ME to cook? LOL ok ok… cold weather to me is slow cooking soups and such (If ya haven’t already caught on to that…). Winter time is when I make a lot of hearty soups, stews, etc. I actually got 3 freezer meals out of dinner last night (I was impressed LOL). I try to stock the freezer that way in the summer if for some odd reason they want what I deem “winter food” they can have it. Summer time is a whole nother type of cooking so stick around… there is a “whole other side of me” the kids say LOL! Ok, so dinner today… well I am lucky to have multiple crock pots courtesy of the Crock Pot Trio’s and I can have 10 pots (3 trios and 1 single LOL) going at once LOL! If you don’t have one and can spare $100 I recommend it HIGHLY! That’s if you are a cooking fanatic or you have a large family, etc. I got mine at Target but I am not sure if they are seasonal so run while you can! I plan on picking up at LEAST 2 more when I get my taxes back if they still have them! Well I have a request for more chicken & dumplings (by my belly LMAO) so that will be in one pot. My brother is a big fan of clam chowder, so I think I am gonna make him one pot and I’ll have some hot & Sour for my mom on a 12qt pot on the stove (cuz it doesn’t need to cook all day). I’m also thinking about trying some Peasant Goulash I found a recipe for in one of my books I found on our Super Shopping Spree. If it turns out (and is pretty LOL) I’ll share it tomorrow. See, I like pretty foods… it makes me (and you LOL) WANT to eat them… its been said (by me at least I KNOW) that we eat with our eyes. I know I do… if it looks nasty, then 9 times out of 10… I ain’t eating it!! LOL! OK so in the last crockpot I will probably make some Bourbon Mango Pulled Pork so the gang can have sandwiches with the clearance crusty rolls I found (and froze… gotta get them out LOL!). So I’ll share 2 recipes today… the Pork and the Clam Chowder to tempt your palate!



Bourbon-Mango Pulled Pork

Ingredients

2 mangos
1 (4 pound) pork shoulder roast
2 tablespoons ground black pepper
1 teaspoon kosher salt
1 teaspoon chipotle chile powder
1/4 cup balsamic vinegar
2 cups water
1 teaspoon chipotle chile powder
2 teaspoons honey
1 (1.5 fluid ounce) jigger bourbon whiskey
2 (12 ounce) bottles barbeque sauce

Directions

1. Peel the mangos and remove the pits. Place the pits into a slow cooker, then roughly chop the mango and set aside. Place the pork shoulder into the slow cooker, and season with the black pepper, kosher salt, and 1 teaspoon chipotle powder; pour in the balsamic vinegar and water.

2. Cover, and cook on Low 5 to 8 hours until the meat is very tender. Once done, drain the pork, discarding the cooking liquid and mango pits, and shred with two forks.

3. While the pork is cooking, puree the chopped mango in a blender until smooth, then pour into a saucepan along with the honey, 1 teaspoon chipotle powder, and whiskey. Bring to a simmer. Reduce heat to medium-low, and simmer, stirring frequently until the mango has reduced and darkened slightly, about 10 minutes. Stir in the barbeque sauce, and remove from the heat.

4. Return the shredded pork to the slow cooker, and stir in the mango barbeque sauce. Cover, and cook on High 1 to 2 hours until the pork absorbs the barbeque sauce.



Awesome Clam Chowder

Ingredients

1/2 pound bacon, cut into 1/2 inch pieces
5 unpeeled potatoes, diced
2 carrots, diced
salt and pepper to taste
2 (6.5 ounce) cans chopped clams with juice
2 (1.8 ounce) packages dry leek soup mix
1 quart half-and-half

Directions

1. Place the bacon in a large pot and cook over medium-high heat, stirring occasionally, until crisped and browned, about 10 minutes. Remove the bacon with a slotted spoon, leaving the drippings in the pot. Set the bacon aside. Stir the potatoes and carrots into the bacon fat. Season with salt and pepper, and cook for 5 minutes, stirring frequently.

2. Pour the juice from the clams into the pot, and add enough water to just cover the potatoes. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the potatoes are just tender, 10 to 15 minutes.

3. Gently stir the leek soup mix into the potatoes until no lumps of soup remain. Stir in the clams, reserved bacon, and half-and-half cream. Cook and stir until the chowder returns to a simmer and thickens, about 10 minutes more.

Well I guess that’s all folks! I’m off to start the pots and conquer the last of the holiday havoc! LOL… Then I have to try to finish my dad’s gloves I have been sewing for his sandblasting machine… he really kinda needs them LOL! HAPPY NEW YEAR!!

Good morning!!! Does my screaming give you a headache? LMAO! Hope your parties went great and let me wish all my readers a very Happy New Year! Its gonna be a great 2010! I’ve set my yearly list of 20 goals and set up my planner already. Dinner is brewing in the slow cookers, the table is full of munchies, and I’m already planning my crafts and gifts for the upcoming year. One thing I have to do is make another fleece tied blanket for my cats as they have taken over my blue camo one!! Darn cats LOL! I saw some cute black fleece with white paw prints that I think I am gonna go get for them and make them a kitty blankey LOL! Maybe just half the normal size though… after all they aren’t as big as I am LMAO! Gotta keep the furry kids warm too!

Ok, so yesterday we talked about New Years food “traditions… If you have come here looking to dress up the “same old boring foods”… well you came to the right spot LOL! I got a great recipe for each food you should be partaking in today! First off, I’m not sure what type/cut of pork you are making, but lets assume it is traditional ham… all kinds of fruit goes real well with baked ham, especially apricots, apples, and pineapple. You could also beer glaze ham… so try this on for size:



Beer-Glazed Ham

Ingredients

1 boneless fully cooked ham (3 pounds)
1 can (12 ounces) beer or nonalcoholic beer
1 cup packed brown sugar
2 tablespoons balsamic vinegar
2 teaspoons ground mustard

Directions

Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Set aside 2 tablespoons beer. Pour remaining beer over the ham. Bake, uncovered, at 350° for 1 hour.
In a small bowl, combine the brown sugar, vinegar, mustard and reserved beer; spread over ham. Bake 40-45 minutes longer or until a meat thermometer reads 140°, basting occasionally.

Ok, so there’s your ham… now what to do with your cabbage? Here is a yummy recipe that even people who don’t care for cabbage should try because it just might surprise you!



Cheddar Cabbage Casserole

Ingredients

1 large head cabbage, shredded (about 12 cups)
1 onion, chopped
6 tablespoons butter, divided
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
8 ounces process cheese (Velveeta), cubed
Salt and pepper to taste
1/4 cup dry bread crumbs

Directions

1. Cook cabbage in boiling water until tender; drain thoroughly. In a large skillet, saute onion in 5 tablespoons butter until tender. Stir in soup. Add cheese; stir until melted. Remove from the heat. Stir in the cabbage, salt and pepper.

2. Transfer to an ungreased 2-qt. baking dish. In a small skillet, melt remaining butter. Cook and stir crumbs in butter until lightly browned; sprinkle over casserole.

3. Bake, uncovered, at 350° for 20 to 30 minutes or until heated through.

Now for your last component… the peas. Many people don’t care for black eyed peas, but here is something to put the bang in your New Years meal!



Black Eyed Pea Chowder

Ingredients

1 pound bacon
1 cup chopped celery
1 cup chopped onion
1 cup chopped green pepper
2 cans (16 ounces each) black-eyed peas, rinsed and drained
1 can (10-1/2 ounces) beef consomme
2 cans (14-1/2 ounces each) stewed tomatoes
1/4 cup diced jalapeno pepper

Directions

In a saucepan, cook bacon until crisp. Remove bacon; crumble and set aside. Discard all but 2 tablespoons of drippings; saute celery, onion and green pepper until tender. Add bacon and all remaining ingredients; heat through.

Then of course you need a dessert… try some:



Better Than Sex Cake (hey I didn’t name it! LOL)

Ingredients

1 (18.25 ounce) package devil's food cake mix
1/2 (14 ounce) can sweetened condensed milk
6 ounces caramel ice cream topping
3 (1.4 ounce) bars chocolate covered toffee, chopped
1 (8 ounce) container frozen whipped topping, thawed

Directions

Bake cake according to package directions for a 9x13 inch pan; cool on wire rack for 5 minutes. Make slits across the top of the cake, making sure not to go through to the bottom.

In a saucepan over low heat, combine sweetened condensed milk and caramel topping, stirring until smooth and blended. Slowly pour the warm topping mixture over the top of the warm cake, letting it sink into the slits; then sprinkle the crushed chocolate toffee bars liberally across the entire cake while still warm. (Hint: I crush my candy bars into small chunks as opposed to crumbs - I like to have pieces I can chew on!)

Let cake cool completely, then top with whipped topping. Decorate the top of the cake with some more chocolate toffee bar chunks and swirls of caramel topping. Refrigerate and serve right from the pan!

Well I hope you enjoyed our New Years dinner. Tomorrow will be taking down the last of the decorations, and shooting them to storage, more cleaning, cooking of course, and getting everything ready for them to go back to school Monday YAY!!!!
