POSITIVE HUMAN INTEREST

Well good morning my wonderful brigade of followers LOL. Hope all is well with all of you this beautiful Sunday morning! I’m just sitting here munching on a roll (cause I woke up with very bad indigestion LOL) and enjoy the quiet because everyone is still asleep. It’s a wonderful sound really… with the exception of the occasional snoring LMAO! Today I want to share something wonderful with you. Most of you know that I don’t watch a whole lot of TV and I certainly don’t watch the news. I like to pick and choose to be depressed thank you LOL. The news is always filled with hate and tragedy and I just don’t like it! Well I was reading some of the headlines from a small local paper called the Galveston Daily News and I found this story…

Rare pink grasshopper Valentine’s gift to museum

SANTA FE — Ronnie McLaughlin IV, a budding entomologist only 7 years old, was routinely searching out crawling creatures when he made a backyard find so rare it will go on display at the Houston Museum of Natural Science.

Ronnie found a pink grasshopper on Valentine’s Day. He named the inch-long insect “Love Bug” and placed it in the terrarium in his room.

When his mother, Kelly McLaughlin, contacted the museum, she got an enthusiastic return call from entomologist Erin Mills.

“I was so excited when I heard about them finding a pink grasshopper,” Mills said. “It’s just one of those kind of cool, mysterious things about nature that a lot of scientists don’t quite understand. So it’s a really cool thing to stumble upon around your home.”

Mills, one of two entomologists at the museum, never has seen a pink grasshopper in her years working with insects.

“It’s a genetic mutation where they have not enough of one pigment, or too much of one type of pigment,” she said. “Pink grasshoppers are not totally rare, but they are unusual. It’s kind of lucky if you come across one.”

In the insect containment room, the pink grasshopper was contentedly surveying a meal of romaine lettuce.

She (or he — it’s too soon to tell) already has gone through one molt, which means the young grasshopper is growing.

Mills hopes to surround Love Bug with a stress-free environment, through more molts and, in a few months, adulthood.

She phones the McLaughlins at their Santa Fe home to give updates and is writing a blog on the insect’s progress.

“Anything can happen with a bug,” Mills said. “Probably her biggest challenge right now is making it through all of her molts and getting to be an adult.

“They have to shed a whole skin. It can be a bit touchy.”

Mills has high hopes for Love Bug. The entomologists could follow the example of the Audubon Insectarium in New Orleans where pink katydids (a relative of grasshoppers) have been bred and put on display.

Love Bug would not necessarily have to have a pink mate in order to produce pink offspring.

“There is a possibility those genes could be carried over to the next generation,” Mills said. “I’d like to have pink grasshoppers on display all the time. It would be awesome.”

In the meantime, Ronnie will be on the lookout for another pink sighting. He is autistic, home-schooled as part of an intensive home therapy program. One of his strongest interests is bugs.

“We told her (Mills) we would keep checking our backyard,” said McLaughlin, who also home-schools Ronnie’s younger brother, Connor.

“She said, ‘Who knows? You might have a hot spot.’”

I was so elated to read a positive human-interest story for a change! On top of that, it was positive involving an autistic child. My heart filled with warmth and happiness! It hit close to home because I home-schooled my autistic son a few years back and we used to do such things like incorporating outings into a learning experience/field trip. I felt pride for the mom, but more for the child! I am thinking about taking my kids to the museum to see the pink grasshopper… as my own little “tribute” to Ronnie (the child). We need to see more of these positive things in the news to educate people that autism is not like a “black plague” or a curse to be avoided, but something to be embraced and help these children. And its important to show that they are not stupid like so many people think!

Ok, so I was sitting there at the table looking at all my craft stuff. And since I am not feeling so great, I wanted to not move too much… so what could I do? I got it! I can make some visors… I have foam and fabric, etc. in front of me. So let’s got to town!



Craft Idea of the Day: Fabric Covered Visors (From original post 12-23-09)

You can buy those foam visors at the hobby stores for like a buck or you can make your own at home. You have to make sure the foam is thick/stiff enough to keep form. The visor only requires a small amount of fabric, so it’s a fairly inexpensive craft to make. It’s a great way to use up scraps of material you just can’t bear to throw away! Simply cut a fabric piece in the shape of the visor. You can do both sides, or just one… your choice. I use spray adhesive to attach it to the visor to hold it in place. Then I line the edges with bias tape and sew it on. That’s it… a cute visor in any theme you want!



Pictured is a music one completed… along with about 13 others that have the fabric already glued on. Breast Cancer, sports, autism, you name it… LOL, you could really make one for every outfit you have!

Well it looks like I might finally have to break down and go to the dentist this coming week as this tooth in the back is keeping me in a lot of pain and from eating as well. BUT my glands look swollen as well so I need to get to the doctor first and get that cleared up! Isn’t this fun!? It’s kinda like a sick game of “which hurts worse?” LOL…



Ok, so I am sitting here in the quiet writing my blog right? Well I keep hearing a thumping and other little noises coming from my back porch, so I just stood up and looked out the window and do you know what I see? MORE baby kitties! OMG they are tiny! They are smaller than all the others. Patchlet, which is one of the strays from when I originally moved into this house, must have had her litter under the tarp covering some of the things on the back porch. Well all the thumping and rustling I heard was 2 of the kittens playing and wrestling! They are so cute! With the zoom on my ancient camera, I was able to snap a picture of one as it was jumping around LOL! I saw at least 3 more… which brings the running total of outside kitties to 18! WOW… my pack is growing every day! As a ever-vigilant MEOM LMAO… I have to make sure they are taken care of. So, guess who will be out there in a little while making sure they have plenty of food and water to survive. I don’t care… I love it. LOL.

Now you know what really bites? The fact that I am very hungry and it hurts to eat even soup… but everyone else has to eat So, what do I make them for supper… hmm… this looks delish! Think I’ll make this again for everyone.



Slow Cooker Salisbury Steak

Ingredients

2 pounds lean ground beef
1 (1 ounce) envelope dry onion soup mix
1/2 cup Italian seasoned bread crumbs
1/4 cup milk
1/4 cup all-purpose flour
2 tablespoons vegetable oil
2 (10.75 ounce) cans condensed low sodium cream of chicken soup
1 (1 ounce) packet dry au jus mix
3/4 cup water

Directions

In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, and milk using your hands. Shape into 8 patties.

Heat the oil in a large skillet over medium-high heat. Dredge the patties in flour just to coat, and quickly brown on both sides in the hot skillet. Place browned patties into the slow cooker stacking alternately like a pyramid. In a medium bowl, mix together the cream of chicken soup, au jus mix, and water. Pour over the meat. Cook on the Low setting for 4 or 5 hours, until ground beef is well done.

Serve this with some mashed potatoes and use the gravy on them, along with a veggie of some kind… YUMMY!!!!! I may try to eat it because I know its so good and just take some Advil to help the pain LOL. It’s worth it! Ok kids, I’mma get off here for the day and go tend to some kitties… then I may lay back down as I’m not feeling too hot still… so until tomorrow… HUGS!

SATURDAY SCATTERBRAIN

Well a big weekend Howdy do to you! Glad you could stop on in partner! LOL… ok so seriously, how are you? Well I feel like hammered… nevermind I won’t finish that LOL! Let’s just say I’m not feeling my best. It’s a bright and early… and somewhat warmer weekend morning here in Texas and I have plans to get a lot done despite my current conditions (plans doesn’t necessarily I will get it done LMAO)! So before I get plans for today, let’s talk yesterday… I really didn’t get too much done in the way of crafting, etc. I was not happy with myself LOL. There was so much going on that I had short spurratic moments of space left to craft and such. I got about 4 toppers/centerpieces completed yesterday.



This is the first one. Remember I told you I had a bunch of other St. Patty’s Day things and would make another topper? Well here he is! Isn’t he precious? I think I like this one better than the other one actually! It also makes me want a bowl of Lucky Charms for breakfast LMAO! Maybe making these will bring me some of the "Luck Of the Irish" LOL!



Then there is my little trick-or-treating Halloween skeleton. I thought it was cute… The skeleton was actually a toy attached to an old straw left over from last years party (it was a new straw so don’t worry LOL). I might go back and add some glitter to the black roses… I’m not sure yet. What do you think?



Here you have my Beach Combers topper. I know living here on the coast, a lot of people have beach theme parties or weddings even! Shoot, one of my brothers got married on the beach! This is made from real shells and I think its just precious. Makes me want to have a beach party now!



And finally the Fiesta one! I was loving the idea of this one, and I knew just what I wanted to do with it. Do you know how nearly impossible it is to find a mini sombrero around here?? OH I was so frustrated. So the kids said “Make one mom”. See my feeble attempt? It sorta looks like a Sombrero on acid to me LOL but its definitely colorful! LOL! Regardless, I kinda like this one a lot too LOL! And the mini maraca actually shakes and makes noise! YAY!



Then I completed some more garden spoons too. Remember the ones I told you I was painting Orange and yellow? Yea, well check out these ones! I made sure the peppers were the actual color that the plant produces… Red Cayenne, Green Jalapeno, and Orange Habanero (also affectionately known as a scotch bonnet too- but that was too long for the spoon handle LMAO)… aren’t they awesome?

So that was my crafts for the day yesterday. I think today I am gonna pull more stuff from the storage unit and start going through it all. Maybe I will find more “junk” to inspire me LOL! OMG now I have to tell you about my kitties! I love cats ok, and I have inside cats and I feed tons of outside stray cats… always have. So anyway I knew that one of the outside females has had a litter of kittens recently… 7 to be exact. Not sure if they are ALL hers but they travel with the mamma, so I’m gonna assume so. Ok, so anyway… yesterday afternoon about 3-4pm I hear this meowing at my front door followed by scratching. I open the door and about 8 cats scatter! Babies too! OMG! I rush to get some dry food out there. They scattered but I left the door open and stepped back in the doorway. They boldly came back up and were not scared of me!



So here you see the first one that came up. My DD and I have named her Harlequin… isn’t she beautiful? And unfortunately I think she is pregnant as well! YIKES more mouths to feed!! There are little tiny babies coming up as well… black and white twins but noticeably different. We are calling them tootsie and roll LOL! There is a white one with markings like one of my mom’s cats, and same demeanor so we are calling him Spazlet LOL!



Ok, so all of the sudden, as we are standing there, all these cats start coming up to the porch to get a bite to eat… A LOT MORE! I say “OMG I’m gonna need a bigger bowl! LOL… so I go to the kitchen and find the lid to an old cake cover (the bottom has cracked) and I put some dry food in it and I mix up a couple of cans of tuna in there. Big mistake… my inside cats start whining LOL so I had to give them their own tuna LMAO! Spoiled little brats! OK, so I get the food out there and they start growling… so I had to split up the food! I step back in the doorway and we had a total of 15 kitties on the porch chowin’ down! I was tickled pink really! I love kitties! A couple of the bigger ones look pregnant so I am really gonna have to be watching closely for newbies and missing kitties… but it looks like I have a whole new gang to feed hanging out at my house LOL!

Ok, so as for today I am hoping the crafting bug comes and bites me hard again. I am so happy when I am crafting. Not only does it make me feel good, but I get stock added to my things to sell and I feel a sense of pride ya know… like I am doing something useful that hopefully someone will want. Its very validating to me sometimes (when I’m in a weird mood LOL) when someone buys my things… it means they like it and I did a good job. I know weird… of course none of you will ever buy my things dangit LMAO because I am teaching you how to make them all! LMAO… just kidding… I thought it was rather amusing. So if the craft bug doesn’t hit me, then I hope to get some things out of storage and start housing them here in my home. I am giving myself until May 1st to get that storage unit cleaned out and that bill eliminated. So I will keep you posted on how that’s going!

OK so we have to eat right? Well since I am not feeling very spiffy and I’m really not in the “full out cooking mood” I think we are gonna have some Nachos for dinner! YAY! Nachos sounds real yummy with some chili and beans and cheese and yummmmm lots of peppers! But I always share a recipe with you, so here is something yummy for you today.



Tropical Grilled Pork Chops

Ingredients

1 clove garlic, minced
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 pod cardamom seeds
1/2 teaspoon water, or as needed
1 teaspoon vegetable oil
1/4 cup rice wine vinegar
1/2 cup sugar
1 mango - peeled, seeded and chopped
1/4 teaspoon salt
1/2 teaspoon cilantro
2 teaspoons lemon juice
1 fresh jalapeno pepper, minced
1 1/2 cups unsweetened applesauce
3 pineapple rings, chopped
1 pinch white pepper
1/3 cup soy sauce
1/3 cup rice wine vinegar
6 pork chops

Directions

With a mortar and pestle, mash together the garlic, chili powder, cayenne, and cardamom seeds. Mix in enough water to form a paste.

Heat the oil in a saucepan over medium heat. Stir in spice paste, and cook until it begins to bubble, about 30 seconds. Stir in vinegar; cook without boiling for 2 minutes. Stir in sugar until it dissolves. Mix in mango, salt, cilantro, lemon juice, and jalapeno; simmer 20 minutes. Stir in applesauce and pineapple; simmer 10 minutes more. Season with white pepper. Place in a bowl, cover, and refrigerate until ready to use.

To prepare marinade, mix 2/3 cup of the salsa with soy sauce and 1/3 cup vinegar. Place pork chops in a large resealable plastic bag, and pour marinade over chops. Seal tightly, and place in the refrigerator for 1 hour.

Prepare grill for medium-high heat. Drain marinade from bag, and heat in a saucepan until boiling.
Lightly oil grill grate. Place pork chops on the hot grill. Cook 10 minutes, or to desired doneness, turning once and basting occasionally with the boiled marinade.

Warm remaining salsa over medium-low heat. Serve pork chops topped with the salsa.

THE CRAFTY BUG BIT ME!

Morning everyone… how are you doing this morning? I am not doing real good… and I had a few things I had to do this morning that were not real fun but now I am free YAY! I am glad to hear from my friends but I am not happy to hear of Jean’s bad times. Hun I hope things get better for you soon! Susan, I went back and fixed the link for the calendars… hopefully it works now. Ok, so I got majorly hit by the craft bug yesterday! It took a big ol’ chunk out of me and didn’t let go until about 9:30 or so last night… (about the time it was time for my nighttime meds LOL). So without further ado… check all this out!



First, remember I told you about the magnetic menu calendar? Well here it is. I stapled all the remaining months together and hot glued the lot to the scrapbook paper (ain’t it cute?). Then that was glued to a piece of poster board and a sheet of magnet glued to the back. I have yet to fill in all the days… but I think its neat.



From there, I started painting more cat litter buckets and I had an idea when I was sitting there painting… sticking with the decopauging theme from the other day. I had scrapbook paper with pretty bright strawberries on it, so I cut it the same size as the “labels” on the bucket sides and glued them to the bucket. Then I overglued with Modge Podge. Once that was dry on all sides, I coated with a clear coat of sealer. Isn’t it adorable?! I just have to drill the drain holes in it and it will be ready for my baby strawberry plants currently residing in my kitchen window LOL! I’m gonna hang these “designer planters” LOL from the rail on my front porch. I think they’ll be cute!



While I was outside painting the buckets, I figured I would get another thing painted. I had picked up this old fashioned wooden “tool box/crate” and I decided that might make a cute organizer for DD’s room. So after the buckets, I painted it blue to match everything else going in her room. I will be decoupaging music notes on that too! And if by some weird chance she doesn't want it, then I might decoupage some nautical stuff on it and give it to my Dad for the new "Man Cave" he's been building LOL!



So while the paint was drying on those, I came back inside and worked on more scrapbook pages. I just got a few done, but they turned out really cute. I love scrapbooking actually. It's a hobby I'm glad I got into, even though it can be very expensive at times LOL! I already had a sticker fetish and it made me develop a paper fetish too LMAO!



I also got started on my Famous People Flashcards for when I host my Italian Night party. I printed black and white photos of famous Italian People and printed out their names. I glued them to scrapbook paper with green and white (the colors of Italy). The names will be cut and put on the backs of the cards and the pictures hung up for people to guess during the game. I have about 6 more to finish making plus one bonus… so 7 LOL!



Then I was staring at this pile of old cd’s… and other junk that was just in boxes from storage… Cake topper time!! I got 9 completed yesterday and let me tell ya OMG they are just the cutest little things! I got holidays, etc… take a look!



Here is a Baby boy topper I made. I didn’t have a horse like I used in some others, so I used this cute little bassinet and the other baby stuff to decorate it. I always like having extras of these baby toppers because there is ALWAYS people around us having babies!



Here is the baby girl one I made. Again, out of horses, so I used this little buggy. I also used all the little girl things that I usually use. I just think these are absolutely adorable! Wish I had thought of them when I had my kids LOL!



Ok, so we have Easter coming up, and I always make big cakes for everything LOL so I had to make an Easter one. I just hope the Easter Bunny mistakenly tries to hide the eggs on it LOL!



Then I have this one which is absolutely precious I think. It’s a Breast Cancer Awareness topper. I made this one, not to celebrate cancer, but celebrate survival. I have had a lump removed that ended up malignant (yes I underwent radiation for it too), and I have had family members with breast cancer, so it hits close to home with me. October is Breast Cancer Awareness month, and I tend to make cakes, cupcakes, etc to remind people. I thought this would be pretty awe-inspiring!



Alright then there is my Homecoming one. People around here make a HUGE deal out of Homecoming… throwing parties, dances, etc. WELL, at a party there is normally CAKE right? And why not have a school colored cake topper to finish it off? I thought it was awesome and the kids here about blew my eardrums when they saw it! LMAO.



This next one is VERY special to me… it’s for my DD Madison’s Sweet 16th Birthday this year. So I HAD to make it awesome! I took one of the glitter notes (which is actually a Christmas ornament and we bought tons to decorate her room with) and some blue and white roses and made this. She looked like she wanted to cry and said it was the most awesome thing she had seen! Ya know I felt good after that!



Ok, then we have Christmas… I absolutely LOVE nutcrackers. For those of you who know me, you know I collect them. Well I had another Christmas ornament, the nutcracker, so I made it into a topper too!



Then, thinking about the boys and the Poker Night they want to have, inspired me to do a Poker topper! We have more decks of cards and excess chips around here than you can shake a stick at, so behold the image sent forth to me by the Poker fairies! If you make it, they will play LMAO!



And finally, with St. Patrick’s Day just around the bend (March 17th), I felt all green with giddiness to create this topper! I will probably make a different one because I have just so much cute things!

So you see, I had a serious crafting bug yesterday and I still have it today. I love it when I get like this because all I have to do is look at something and I get an idea. I get so much done and I feel a sense of pride and accomplishment. I love it! Now you know what I want to talk about? My other passion… FOOD! I think tonight I am going to make some…



Oh-So-Good Chicken Casserole

Ingredients

4 teaspoons olive oil
6 tablespoons sour cream
4 ounces shredded Cheddar cheese
2 cups fresh sliced mushrooms
1 (16 ounce) jar salsa
2 cups cooked white rice
8 ounces boneless chicken breast halves, cooked and diced

Directions

In a skillet, heat oil over medium heat. Saute mushrooms. Combine mushrooms, sour cream, cheese, salsa, rice, and chicken. Place in a greased casserole dish. Bake at 350 degrees F (175 degrees C) for 25 to 35 minutes. Top with sour cream and green onions if desired.

LOVELY LITTLE LISTS

Well GOOD morning everyone! How are you doing today? I’m well… cold but well. Its not as bitter a cold today as we are on a “warming trend” the weatherman says LOL! I am really scatterbrained today, so the topics are all over the place… lists, crafts, food, gardening, you name it and I’m thinking about it! I hope everyone is ok… I’ve noticed a decline in readers. I hope everyone is still enjoying the information I share. Well for those still out there, here we go…

Now, I hate to admit it, but recent party planning and the lists, etc. that I use has put me into overdrive! LIST OVERDRIVE! I learned a long time ago that I function best with lists. They keep me organized and help me accomplish all kinds of things. I suspect I may be ADHD (as does my son’s doctor), and I treat myself as such (even though I have never had an official diagnosis), so I have learned that this is a tool that helps me in life. Without them I tend to be disorganized, forgetful, and downright LOST! Grocery lists, inventory lists, Monthly menus, To Do lists, Guest lists, Bill paying lists, etc. You name it… so guess what I am going to be doing today? Yep LISTS!!!

Craft Idea of the Day: Homemade Menu Calendars

For starters of my pile of lists, I’m going to make my own menu calendars. I found a great free printable blank calendars on another blog entry… check it out HERE! Then I am going to print them out smaller than a full page and bind the months together with some rubber cement. Then I am going to mount the pile of calendars onto some pretty scrapbook paper (food or kitchen related). After that all dries, I am going to put it onto a piece of cardboard cut the same size as the scrapbook paper and mount a strip of magnet on the back. Once completed, I’m going to write a meal on each day and hang it on the fridge so everyone will know what’s in store for the upcoming month. I hope it will turn out cute… and I have all the supplies to do it, so even if I mess up LOL., I can do it again! You can do this too… and not just for meal menus, but just a calendar in general. You can use a picture of your family, your pet, etc. There are also many computer programs to design and print your own calendars as well. The possibilities are really endless. I choose to hand make my own cause it allows me to be more creative.

Then I got in a really crafty mood yesterday when I went through another box from storage. I had some periwinkle blue ceramic tiles that I found on clearance (like 5 cents each at the Home Depot one time. I bought them cause I needed a cheap purchase for a secret shop… the box had like 24 or something… didn’t count them LMAO!) and I sat there thinking… what can I do with these? Then it hit me! I recently found some scrapbook paper that matches my current living room! I have modge podge, decorative papers, and tile… DECOUPAGE TIME!



I cut the paper to fit the tile and decoupaged it on. On 2 of the tile, I just cut out one of the flowers with some special scissors, glued fleece (you could use felt too) and then I sprayed varish/clear sealant on it. I glued a ribbon around all 4 sides and then a tiny bow where the end of the ribbon was and… Voila a pretty coaster to match my living room!!



Now with the tiles that have a full square covering them, I am gonna checkerboard them with the plain blue tile to make a pretty table top! I am going to cut a piece of plywood to the same size as my table and adhere the tile to it. Once it is completed I will have a lovely tabletop to match my living room (as it is right now!) I think it’s turning out very pretty! I just need to go get more paper LOL. Then I thought I could make others and sell them! Small end tables, full size coffee tables… or BOTH! How cool would that be!? And when I redo the living room in 60’s psychadelic… I could do tie-dye and 60’s symbols like peace signs, hearts, moons, etc! COOL huh? LOL…

Then I found more wooden spoons in storage so I spray painted them bright orange. They are gonna be more garden markers and I think this color will stand out very nicely against all the green I hope to be having! I tried a couple in yellow too, but I’m not diggin’ that color as much. Not bright enough! Maybe multiple coats will look better… if not- it’s off to the store for paint YAY! LOL…

Then my brother was a gem and brought me some wooden palates last night, so I think I’m gonna start building my planters on the back porch today. (Can ya tell I am anxious about my gardening coming up? LOL) I’m not sure if I want to line them with plastic or with like a mesh or a moss or something… will have to look around the Garden Center and see what I like best (and what’s cheap)… right now, it looks like the plastic might win! I have plenty of that everywhere LOL! I’m also going to paint some cat litter buckets white and make some hanging planters… I might even decoupage one with Strawberry paper and make a planter for the cute strawberry plants in my kitchen window… which are already giving me baby berries BTW! Isn’t that the coolest!?



Then I think I am going to start cutting material for my daughter’s room and one of the things I want to make is a scrap wreath. Basically you cut strips of material and you tie it around a wire ring/wreath form. You keep tying and tying until you have a very full wreath! I have to cut the closet curtain too… and get all the measurements for everything in her room. The goal is to have her room redone by the end of the month. That only gives me like 9 days YIKES!! I best get motivated and busy huh!? Maybe since I am still in the crafty mood, it'’ll be the perfect time!



Okie dokie so we gotta eat right? A crafter has to eat to keep up their crafting strength if nothing else LMAO… so what to make. I think some Meatloaf with some Broccoli cheese rice and some garlic focaccia bread slices would be nice… last time I made it, it was a huge hit! But I’ll share a different broccoli casserole side recipe with you today that is also a big hit here in my house.



Ritz Broccoli Casserole
(I found the original recipe on the Kraft website and made some adjustments.)

Ingredients

2 pkg. (16 oz. each) frozen chopped broccoli, thawed, drained
1 lb. VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
72 RITZ Crackers, coarsely crushed (about 3 cups), divided
1 (10oz.) can of cheddar cheese or cream of broccoli soup
1/4 cup (1/2 stick) butter or margarine, melted

Directions

HEAT oven to 350°F.

MIX broccoli, VELVEETA, soup, and half the cracker crumbs until well blended.

SPOON into 2-qt. baking dish. Mix remaining cracker crumbs and butter; sprinkle over broccoli mixture.

BAKE 45 min. or until heated through.

IT’S PARTY TIME!

Morning guys and gals! How are you this blistery morning? I’m freezing really, but in general good spirits considering I have sick babies, busted pipes under my house, and a broken side mirror on my car! I hope you enjoyed yesterday’s Mardi Gras festivities. As I discussed a few days ago, its time for me to start planning my yearly parties. And of course I know I’m always talking about the parties we have here. Well, I’ve been asked in an email I received from Tabitha, and yes I’m gonna share all those ideas with you as well so you can have your own fun and festivities! Together we’ll be discussing decorations, foods, and everything in between! You can choose to just have holiday parties or you can have themed parties just as an excuse to get together with family and friends (that’s my excuse LOL)! If planned properly, you can have the best time and make some great memories while being nice to the wallet too! And if you are a “people person” or like to entertain crowds, then maybe hosting a couple of parties would interest you but you just don’t know where to start. So I’m gonna help you!

OK, so while sitting there yesterday with my ill kids, I got out the trusty “Mom Planner” as well as paper and pen. I thought about parties I had last year, and ones I want to have this year. I plan fiscally LOL so this “year” will be from Feb. 2010 to Feb. 2011. There are 3 obvious BIG ones ahead… Halloween and Christmas, which are just always a must, and my DD’s Sweet 16 Birthday Bash! The guys want another Poker night, and there is Easter (which is on April 4, 2010 btw) as well… ok so we have 5 so far. We’re gonna be some party throwing fools LOL! Gonna aim for a big 4th of July BBQ cookout and Crawfish Boil which will also double as my Dad’s birthday party… yep, he’s an independence baby! I want to do a Fiesta/Mexican theme dinner party and an Italian night. Then of course we have Super Bowl and Mardi Gras NEXT year, as well as St. Patrick’s Day. But we really don’t “Party All Out” on those like the others, so I don’t really “count” them, I just plan for them. So we’re up to 8 now right? OK I also thought of Circus day! I think it would be neat to have games, etc… and maybe things like Dunking Booths or a Moon Walk or something! Wouldn’t that be AWESOME! I know some people and maybe I could barter for those things! Anyway, as you can see I have a HUGE list already working, and I have more ideas for themes, so get ready cause the next year is gonna be full of fun times, fun crafts, and really fun food!

One of my friends once told me that I should do party planning for a living. He said everyone always has such fun at my parties and they are always decorated and catered so well. He thinks I could make a lot of money like that. Well I told him thank you for all the great comments but not many people are looking to host parties in a recession. Of course, I may be wrong… I don’t know. So I thought the next best thing would be to help everyone have homemade fun instead. So I want to talk today about the steps to make you a good “Party Planner”.



1. Invest in a good calendar! It can be one that you hang on the wall or carry with you. I use the “Mom’s Plan It” products. I carry the “Engagement Calendar” with me everywhere! It’s awesome. It has tear out lists and even cute stickers to mark special events, etc. They also make magnetic calendars, paper calendars, etc. Check out the line of products on Avalanche Publishing (which BTW is having a 75% off sale on all 2010 dated items advertised on the homepage). If you’re like me, once you use it, you won’t want to use anything else! We LIVE out of my planner LOL! And you can use it for everything, INCLUDING planning your parties! Day Runners and even homemade calendars work well too! Use whatever is easiest for you.



2. Pick dates for your parties. Generally, I hold most of my parties on either Friday nights or Saturdays. That seems to be when MOST people are available… they don’t have to work, they can get baby sitters, etc. Of course, my parties are all “kid-friendly” so that’s not an excuse my friends can use for not coming LOL! There are also people who may work odd shifts (like MANY in my family!)- refinery shift workers, doctors and medical personnel, fire fighters, etc. etc. etc.! Try getting together with everyone a month or so in advance and asking if they would be able to attend your party on such date. Try to be considerate of your guests and pick dates that are good for them to attend. This insures you HAVE guests show up, and that they all have a terrific time!



3. Pick themes for your parties. If you are going to host on a day other than a Holiday, pick a theme and plan accordingly. You don’t HAVE to have a theme, but it tends to make the evening more interesting! For instance, trying to figure out who is who at a costume party or masquerade ball is quite fun. Or having everyone dress as their favorite 50's Rock & Roller is cute too! If you just would like to host a dinner party, why not turn it into a themed “cuisine” party (IE. Italian Night, Fiesta Night, etc.). When you figure out a theme, then the menu, decorations, and general planning comes easily!



4. Research your theme. Ok, so you chose to host an Italian night… awesome! That can be a fun night! Rent or borrow (or even invest in) some round tables. Cover them with Red gingham fabric table clothes. Hang some cardboard cutouts of Italian flags or famous Italians such as Galileo, Sophia Loren, or Luciano Pavarotti … etc. etc. etc.! How do I know this? RESEARCH! Look up ideas for your theme on the internet or at the library. You can find ideas for a wide range of themes. And, even if you are making it up, then maybe research the history of your topic and you may pull ideas from the information you find. Find out about games played in that region, traditional gifts of the area, costume, etc. All these things you can incorporate into your party!



5. Plan and make your invitations. You have the dates, now you need to figure out what time you will have your party and how long you want it to last. (I normally do not put an “end” time.) Type up and print your invitations on your computer. You can buy printed stationary or ready-to-print invitations, print stationary online, or you can buy invitations that you hand print the information on, all to match your theme! I usually print out the information on printed stationary or make the invites myself. I think its cuter and the full size paper allows me to put as much, or as little, information on them as I need. Make sure to mail out your invitations far enough in advance so that your guests can make arrangements. Request R.S.V.P.’s no later than 1 week before your party so that you can get a final count of expected guests and make enough food, preparations, etc. Mention on your invites the date, times, address, if there will be games, a buffet or formal dinner, if costumes are required, etc.!



6. Plan and make (or purchase) your decorations. Now you don’t HAVE to decorate by any means… but it gives ease to any atmosphere. It makes the situation fun… somewhere people WANT to be and can relax. My guests often tell me they look forward to my parties because it gives them a temporary escape from all their troubles and they can relax and in turn become refreshed to deal with their lives. Do you know how GOOD that makes me feel when they tell me that? It makes me think I am doing something right! So, when you did your research, you learned the traditional colors, etc. that would be appropriate for your theme. Make flower arrangements, poster cutouts, print pictures from the internet, etc. If you choose to purchase, allow yourself at least 6 weeks in advance to place and receive your order. Two websites I order some of my things are Bargain Balloons and Party Cheap. They have great variety and really good pricing! The only thing with Bargain Balloons is that you will need your own helium tank to fill the mylars you purchase because they are NOT inflated. But you can buy a disposable tank at party stores, Hobby Lobby (online too. Oh and make sure to wait for the 40% off coupon to save money!), and even Wal-Mart. You can also check out Oriental Trading Company and Party City for great party theme packages and items too! Decorations can also be used as game props. Decorations include table centerpieces, wall pictures, party props, etc. Go all out… It’s fun to be creative!

7. Plan your menu. Now this can be a bit tricky. Make sure to prepare a wide variety of things allowing for all kinds of situations- vegans, allergies, etc. Menus will vary depending on the type of party you are having.



Most of my parties tend to be buffet style… tons of variety and serve yourself types. But I do also host the traditional sit down dinners as well like Thanksgiving, Christmas, etc. On “International” themes such as Italian, Mexican, Greek, etc. I try to have 3 of each- appetizers, entrees, and desserts… all served with a themed salad and bread. So your menu might look something like this (yes this is a small version of one of mine!)



For example, if you have an Italian Night you menu could include: Lasagna with meat sauce, cheese tortellini, Chicken Parmesan, and veggie bruschetta. Have loaves of bread with olive oil for dipping and wine and sparkling (non-alcoholic) drinks and even desserts if you like. Cheese trays with various cheeses and crackers are good too! So are fruit plates with grapes, berries, etc! If you plan to serve hot foods, either keep them warming in your oven until ready to serve (but make sure they don't get dry and unedible) or buy a couple of those buffet servers with the warming sources. They are not real expensive and a one time investment. Then all you need to worry about is aluminum pans in the future!



Now you can go out and BUY premade platters of food, but you are going to pay an arm and a leg sometimes. So if you want to DIY, then go online and find pictures of professional platters and make yours look like those! Then when they ask where you got them, you can remark how you made them yourself and watch their faces in amazement! (I made this “Meathead” platter for our last Halloween party! The guests were really diggin it!) For the very creative, you probably won’t even need a picture guide… but it’s perfectly alright if you do! Be prepared to tell people what’s in a certain dish in case they have allergies to certain things. An alternative to this is to print out the recipe on an index card and place it by the platter so they can see what’s in it. After the party, if they enjoyed the food, let them take the recipe card home as an added bonus! You can even prepare copies enough to pass out if others want the recipe as well.

8. Plan gifts and games galore! Many hosts/hostesses like to give their guests complimentary favors as a token of their appreciation for coming to their parties. I do this at every party I host. I appreciate my friends and family taking the time out of their schedule to come be with me for a while. These can be small or large or whatever you find appropriate.



For example, those who come to my Italian Night party will each receive a small bottle of olive oil or balsamic vinegar that has the recipe to one of the dishes I will serve (with also uses the vinegar or oil in the recipe). The recipe is printed on pretty stationary I found on clearance at Office Depot. It’s then rolled and tied to the bottle using color-coordinated ribbon. Favors could be edible or not, its up to you. You can make them theme related or personal to the guest. Favors are not a requirement by any means... just a nice little token of appreciation!



Games could include “Guess that Italian” using the pictures you print of some of the famous Italians you find online. LOL You’d be surprised how people stumble on names even of more famous and recognizable faces LOL! It can be very fun! The prize could be an Italian Dinner for 2 Gift basket (as the one I make pictured) or something else you would love to give. Incorporate some of the games of the region you found during your research. Give prizes for the winner of your games or just play for the fun. As the host/hostess, the choice is yours!



9. Party Day- TIMING! Give yourself enough time allotted to set up decorations, complete foods, etc. If your party is at 6pm, and you have tons of decorations, etc. try setting up/hanging some the night before (if you have to work the next day) or take the whole day of (non-working) to decorate and prepare. Always allow for some extra time because you never know if you’ll run out of staples and have to run to the store to get some when you are hanging decors, or any other little OOPS-es that you didn’t plan for! PLUS, you always have those “early bird” guests who arrive before everyone else and it can be a little awkward if you aren’t prepared.



10. Enjoy your party! You’ve “done your homework” and prepared an awesome party for your family and friends. You put your best foot forward with the time and effort you used in planning this party. Now sit back and enjoy the ride. Host the dinner and the games and just have fun. Take photos and have a lot of laughs with the ones closest to you! It will be something you can all talk about for years to come!

OK, let’s talk food! Now, within this blog, since I have started, I have posted a total of over 150 recipes with at least 30 of them being “Party Appetizers”. Depending on your party, any of these could be appropriate for serving. Or your secret family recipes or ones you find on the internet would work too! Just a word of caution though…. always try out new recipes first to see if they are any good or need to be changed. A trial run is always wise before serving a group of people!

As for my dinner tonight? Well since we got some sick babies in the house, its gonna be soups and hot sandwich night… things easy enough to swallow and digest. Macaroni & Cheeses, etc. and other things easy on their little tummies! I saw some frozen crawfish tails in the freezer and some Crawfish Po’boys are sounding mighty yummy for my sandwiches though LOL! Oh gee, I love living on the Gulf Coast with all the yummy seafood. Never had one? Oh boy… oh boy… oh CrawDaddy PO’BOY! LOL… Try this recipe on for size!



Crawfish Po’boys

Ingredients

Vegetable oil for frying
1 cup corn meal
1/2 cup all-purpose flour
2 teaspoons Creole seasoning
1 teaspoon salt
1 teaspoon ground black pepper
1 cup buttermilk
2 teaspoons hot pepper sauce
1 16-ounce package crawfish tail meat, rinsed and drained
4 hoagie rolls, sliced in half horizontally
Shredded green leaf lettuce
1 recipe Remoulade Sauce (Recipe follows.)

Remoulade Sauce:

1 cup mayonnaise
3 tablespoons dill relish
2 tablespoons fresh chopped parsley
2 tablespoons fresh chopped chives
2 tablespoons chopped capers
2 teaspoons Creole mustard
1 1/2 teaspoons chopped shallots
1 teaspoon hot pepper sauce

Directions

1. Fill a Dutch oven or deep fryer with vegetable oil to a 2-inch depth. Heat oil to 350 degrees.

2. In a medium bowl, combine cornmeal, flour, Creole seasoning, salt, and pepper.

3. In a separate bowl, combine buttermilk and pepper sauce. Soak crawfish tails in milk mixture for 10 minutes. Dredge crawfish in flour mixture.

4. Fry crawfish, in batches, for approximately 3 minutes per batch, or until golden brown. Drain on paper towels.

5. Serve on hoagie rolls with shredded lettuce and Remoulade Sauce.

Remoulade Sauce:
In a small bowl, combine all ingredients, stirring well. Cover and chill.

Yep, we LOVE seafood in this house! And I am lucky to live on the Gulf Coast to where we can get fresh seafood all the time pretty much! But in the summer is when its best… AND CHEAPER! HAPPY MARDI GRAS! FAT TUESDAY

Well WHO DAT be knockin at my bloggin door?! LMAO! Welcome to the Mardi Gras edition of my life LOL! Its gonna be a cold one, let me tell ya! Freezing temps must be combated by none other than what else?



Yep… A PARTY!!! Get the warm ovens and cookers going and the blood flowing and we’ll have no problems staying warm! So today is about decorations and foods for the last day of Mardi Gras! This year, Mardi Gras Day is on Tuesday, February 16, 2010. Mardi Gras begins on "Twelfth Night," (12 days after Christmas) on the 6th of January, culminating on Mardi Gras Day. Each year, Mardi Gras Day is 46 days before Easter, and thus is on a different date (although always on a Tuesday) each year. Mardi Gras which is French, meaning "Fat Tuesday", is the day before Ash Wednesday and the start of lent. For many, the celebration is highly religious, but for some, Mardi Gras is an opportunity to celebrate and be festive as much as possible before lent. Now, here’s a great article I read on Taste of Home… I couldn’t have written a better one myself, so I’ll share it here.

A Family-Friendly Mardi Gras Celebration

Bring the flavor of New Orleans to your home on Fat Tuesday with these party plans. It's easy to turn your house into a family-friendly French Quarter for Mardi Gras with a few decorations and most importantly, some Cajun cuisine.

Traditionally, Mardi Gras is a three-day celebration prior to Ash Wednesday, the beginning of Lent. The final day of Mardi Gras is known as Fat Tuesday. It serves as the last big chance to "live it up" before forty days of fasting.

Here are a few ideas to make your party the hit of the season:

Send out paper masks as invitations to a masquerade ball. In New Orleans, invitations, not tickets, are distributed for attendance at Carnival balls during Mardi Gras season.

Use bright colors and shiny flatware for your table or buffet. The official colors of Mardi Gras are purple, green and gold. Lay aluminum doubloons or shiny chocolate coins around your table interspersed with sparkly, colorful beads and masks.

Bring the party to Bourbon Street by setting the mood with a little Zydeco, Cajun or Jazz music. Bands like the Funky Meters, Buckwheat Zydeco or Preservation Hall Jazz Band are sure to set the tone.

Pass out feathered masks or inexpensive paper masks and beads to guests as they arrive at your party, then ask the guests to add their names to an elaborate Mardi Gras-themed hat. Crown a king or a queen for the day by picking names out of the hat, then have the king and queen wear the hat for the rest of the party.

Bake your own King Cake (see recipe below) —a ring of twisted pastry or bread topped with purple and green frosting or colored sugar that contains a plastic doll hidden inside. The person who finds the doll is supposed to have good luck for the year and is crowned the "King of the Feast."

Have children follow a parade route through the house conga line-style. Give them colorful beads and doubloons to throw to the adults at the party, or vice-versa.”




OK so lets start the day off right with some “Fat Tuesday Mardi Gras Pancakes!” Check out these I made for the kids! (I have 2 sick home today!) I even put their beads on the plate too… extra festive!



Now let’s talk crafts! Like the article said, the colors of Mardi Gras are gold (symbolizing "power"), purple (symbolizing "justice"), and green (symbolizing "faith"). You can find tons of cute and glittery decorations at most Hobby Lobby, Michael’s, JoAnns and other crafts stores as well as party stores like Party City, etc. But you know me and what do I always say? Where’s the fun in that?! Let’s get crafty and whip up some of these great homemade decorations!



Paper chain garland is always a simple decoration. Grab some scrapbook or construction paper in green, purple, and gold and cut into strips. Then glue, tape, or staple the “chain links” together, alternating colors.




Laying strings of beads on the table or hanging them for ceilings and walls can add a nice little flare to your decorations. You can also use Christmas lights to decorate.

You can make your own table runner in the traditional gold, green and purple colors for Mardi Gras. To do this all you will need is some glue, glitter, and a fabric in the color of your choice. Once you have the fabric run glue all around it and add the glitter to it to make it very decorative for Mardi Gras. Cut the fabric down to size for your table and then you can tape the edges down underneath the table. You can get these supplies at your local craft store for about ten dollars and you can use any fabric you choose including plastic or felt. This is a very simple easy homemade idea for getting your house ready for Mardi Gras.

You can also make a homemade Mardi Gras decorative bowl for serving treats. You will need a plastic or glass bowl and some paint in the gold, green or purple colors. Paint the bowl in the color of your choice and then let it dry for a day. This bowl can come in handy as a food serving bowl or you can fill the bowl up with beads to add flare to your house during Mardi Gras. This bowl will be perfect for Mardi Gras and can be made by supplies from your local craft store or retail store for about six dollars. Or you can use a bowl you may already have to save money! If you have a colored bowl, you can also simply dress it up with Mardi Gras and Carnival Stickers for a cheap & easy party prop!



Mardi Gras Shoebox Float
These mini floats make great table centerpieces and can even be made with special places to hold fresh flowers, foods like dips, etc.!

Materials needed:

Shoe box with lid (one for each float you'll make)
Scissors
Glitter, tissue paper, construction paper, aluminum foil, paint, paintbrushes, or other decorative materials
Glue

1: Pick a theme for your float. or use an actual New Orleans Mardi Gras Parades theme. Be creative when choosing your theme. It could be anything you like your favorite movie, political or current events or even Mardi Gras as theme itself.



Shoe Box Float Themes
Usually decorations on Shoe box floats followed simple themes from book report stories, Movies, favorite television shows of which represented story characters scenes and events, to serious themes like "Just say no to drugs", or "Hurricane Katrina Recovery" or "The kingdom of make-believe!" just as an example. These floats theme and design are limited only by your own imagination and of what you have on hand to decorate with.

Remember a Mardi Gras Float is rolling scenery or just a background for the riders. Some floats are castles others battlefields and places created from the imagination of the float designer. You can look up Mardi Gras Float pictures on the internet for lots of great ideas!

Take your box and cover both parts (the lid and the base) with the colored Christmas paperback foil wrapping paper or plain aluminum foil. Then, flip the box over and attach the lid to one side of the box using the stapler or, a hot glue gun, or tape.

2: Remove the lid from the shoebox, turn the box upside down on the table and glue the lid (so that it stands up) to one end. Now your float will have a back.

3: Decorate your float using tinfoil, tissue paper, glitter, paint, markers, and other materials. Toys and even Christmas cards or pages out of story books. Get creative and as they say think out of the box!



Mardi Gras Mask

You need:

Mask Pattern
Purple Craft Foam
Sequins and/or Gemstones
Feathers
Wooden Skewer or Dowel
Glitter
Metallic Pipe Cleaners
Low Temp Glue Gun

Instructions:

Print the Mask Pattern. Staple it all around the outside edges to craft foam. Cut it out. Paint dowel gold. Let dry. Decorate mask using gemstones, glitter and gold paint. Wrap pipe cleaners around a pencil. Glue with feathers to the back of the mask. Hot glue one end of the mask to the dowel.

You can also make some masks and leave the dowel off and hang on the wall for decorations.



Jester's Hat

You need:

Jester Hat Pattern
4 pieces of Craft Foam (green, purple, yellow or gold)
Low Temp Glue Gun
36 Jingle Bells - 3/8"
Scissors
Stapler

Instructions:

Cut a piece of craft foam into a 3" strips. Glue together using a low temp glue gun until you have enough to fit around the child's head. Print 8 pages of the Jester Hat Pattern. Staple to foam around edges and cut out. Glue each piece to the top inside edge of the foam crown. Glue two jingle bells on each point. Glue jingle bells all around the crown.

Mask Bouquet
Mardi Gras mask bouquets are easy and elegant centerpiece ideas. You can buy several different sized and shaped Mardi Gras masks from a local discount or online party store. You will also want to obtain a purple, green or gold vase, flower arrangement foam, a hot glue gun and several long, thin craft sticks.

Place the foam in the vase. Hot glue your masks to the craft sticks and place into the foam in the vase. Vary the mask lengths and placements. Tie a multicolored Mardi Gras ribbon around the neck of the vase to complete the look.

Treasure Chest
You can create a Mardi Gras treasure chest centerpiece that can also double for your guests' party favors. You will need one large box base, scotch tape, a stapler, gold, green or purple tissue paper, ribbon and glitter pen, Mardi Gras beads, doubloons, miniature Mardi Gras masks, feathers, a king cake and cellophane bags.

Begin by taping the colored tissue paper to both the inside and outside of the box. Staple the feathers to the rim of the box. Then fill the box with all your Mardi Gras beads, doubloons and other novelty items. Cut your king cake into individual pieces and place the pieces in cellophane bags. Tie the bags with a ribbon and use the glitter pen to write your guests names on them

If you plan on crowning a king and queen of Mardi Gras, be sure to have crowns, scepters, and royal purple robes. If you aren't going to have a crowning ceremony, these items would be great to create a photo-op area or just use for decorations.

Oh goodness… there is so much you can do for decorations… AND a menu too! Cajun corn chowder, seafood gumbo, crab cakes, Bloody Marys, Shrimp Remoulade, crawfish dip, Andouille Sausage, Jambalaya, Etoufee, etc. You name it! OMG I love Cajun food… and yes that INCLUDES alligator! YUM! Since there are TONS of great Mardi Gras recipes you can make, I want you to 1. Chunky Crawfish Spread

Ingredients

1 package (16 ounces) frozen cooked crawfish tails, thawed
1 package (8 ounces) cream cheese, softened
1 medium green pepper, finely chopped
1 medium sweet red pepper, finely chopped
1 small onion, finely chopped
6 garlic cloves, minced
1/2 to 1 teaspoon Creole seasoning
1/2 teaspoon salt
6 to 12 drops hot pepper sauce
Assorted crackers

Directions

Chop crawfish; pat dry. In a small bowl, beat cream cheese until smooth. Add the peppers, onion, garlic, Creole seasoning, salt and hot pepper sauce; stir in the crawfish. Cover and refrigerate for at least 2 hours. Serve with crackers.



New Orleans Jambalaya

Ingredients

1 pound smoked kielbasa or smoked Polish sausage,. cut into 1/4-inch slices
1 pound boneless skinless chicken breasts, cubed or 1 pound of shrimp, shelled
2 celery ribs, thinly sliced
1 large onion, chopped
1 medium green pepper, chopped
2 garlic cloves, minced
1 can (28 ounces) diced tomatoes, undrained
2 cups uncooked rice
2 cups water
1/2 pound fresh or frozen uncooked medium shrimp, peeled and deveined
3 tablespoons minced fresh parsley
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 to 1/2 teaspoon cayenne pepper

Directions

In a Dutch oven, saute sausage for 1 minute. Add chicken; saute 2 minutes longer. Add the celery, onion, green pepper and garlic; saute for 2 minutes or until vegetables are crisp-tender. Stir in the remaining ingredients. Bring to a boil.

Reduce heat; cover and simmer for 20 minutes or until chicken is no longer pink; stir. Let stand for 5 minutes to absorb any remaining liquid before serving. Fluff with a fork.



Roasted Cajun Potatoes

Ingredients

2-1/2 pounds medium red potatoes
1/4 cup Crisco® Light Olive Oil or Canola Oil
2 shallots, chopped
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon pepper
2 tablespoons minced fresh parsley

Directions

Cut each potato lengthwise into eight wedges. In a large bowl, combine the oil, shallots, garlic, salt, paprika, cayenne and pepper; add potatoes and toss to coat. Place in a greased roasting pan.

Bake, uncovered, at 450° for 45-50 minutes or until tender and golden brown, turning every 15 minutes. Sprinkle with parsley.



Traditional Mardi Gras Kings Cake
(No Mardi Gras is complete without this cake LOL! A "King Cake," also known as a "Twelfth Night Cake," or "Twelfth Cake," is a colorful cake which contains a plastic doll (baby) baked inside. Originally, a bean was baked into the cake, but the plastic baby doll is more commonly used today. The most common New Orleans King Cake is rolled with cinnamon and covered with icing or glazing with green, gold, and purple sugar sprinkled on top. The person who gets the slice of King Cake with the baby must provide the next King Cake (or host the following year's "Twelfth Night.")

Ingredients

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
3/4 cup sugar, divided
1/2 cup butter, softened
1/2 cup warm 2% milk (110° to 115°)
2 egg yolks
1-1/4 teaspoons salt
1 teaspoon grated lemon peel
1/4 teaspoon ground nutmeg
3-1/4 to 3-3/4 cups all-purpose flour
1 teaspoon ground cinnamon
1 egg, beaten

GLAZE:
1-1/2 cups confectioners' sugar
2 teaspoons lemon juice
2 to 3 tablespoons water
Green, purple and yellow sugars

Directions

In a large bowl, dissolve yeast in warm water. Add 1/2 cup sugar, butter, milk, egg yolks, salt, lemon peel, nutmeg and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky).

Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.

Punch dough down. Turn onto a lightly floured surface. Roll into a 16-in. x 10-in. rectangle. Combine cinnamon and remaining sugar; sprinkle over dough to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Place seam side down on a greased baking sheet; pinch ends together to form a ring. Cover and let rise until doubled, about 1 hour. Brush with egg.

Bake at 375° for 25-30 minutes or until golden brown. Cool completely on a wire rack. For glaze, combine the confectioners' sugar, lemon juice and enough water to achieve desired consistency. Spread over cake. Sprinkle with colored sugars.
