THE TIES THAT BIND

Welcome boys and girls. How are you doing today? I am doing alright… its gonna be a busy full road ahead of u s, but you know what, I’m ready! For those of you who “know” my mom from here, you know she has recently had an injury that has left her needing a little bit of help around the house. Hense, me… cooking, cleaning, etc. Well, she finally got in to see her normal doctor and he was not happy with how people have treated her medically the last couple of weeks. Long story short, it’s a major injury and she’s gonna have a little while for recovery. F-A-M-I-L-Y… the ties that bind and make us strong! SOOO what we’re gonna do is show how much we care! Let her know… email, comments, snail mail, whatever… let’s show her she is loved shall we! Meantime, its gonna be some major mass cooking for awhile and that means more recipes for you! YAY! You get to benefit too! So get ready for some wild and crazy adventures!

Ok, I got an email asking me why I “sign” every post with the very last word “HUGS”. It’s kind of corny, but I’ll tell you. With so much misery and despair in the world today, I figure everyone needs a good old hug. So just like if you leave your mom’s house or your grandma’s house and hug her when you say goodbye, its my cyber-hug for you when you leave. Silly, huh? Oh well deal with it! LMAO… j/k!

Well don’t ask me how I did it, cause this basket gave me a heck of a time, but I pulled off the flirty basket. She wanted flirty sexy but not over the top raunchy sex, so that’s what I gave her. The recipient is a Gym teacher and he is into working out, etc. She wanted things to flirt with him but not fatten him LOL… healthy if you will. So this is what I came up with… really playing on words and packaging.

1. Feather Mask- Indulge in your “Secret Desires” was printed on the package.
2. Bare Naked Granola (the name was good enough for me LOL!)
3. Kiss Me, Its My Birthday Flashing Lapel Pin (Birthday: the gift, Kissing and flashing? Too perfect!)
4. Truth or Dare Coupons (You KNEW coupons were gonna be in there somewhere, right? LOL)
5. Red Hots- A Fat Free food (you got it he’s hot and spicy flirting right? LOL ok just checking)
6. Sexy Dice- “Roll the dice and take a chance ON me” (Couldn’t have said it better.)
7. Trojan (hey gotta promote safety Just in Case!!)
8. Fresh Pecans… (NUTS are always good LOL!)

I wrapped it all up in a cool looking birthday paper because she didn’t want anyone knowing her business (understandable) and put a bow with the guys 2 favorite colors on it. I think it turned out really well actually. I was quite impressed I was able to pull it off. Shoot, even the clerk told me it was a tough one at one of the stores I went to buy some of the “sexier” stuff at. He was right. BUT I did it and I’m proud. Just hope nobody else wants to be flirty sexy! LOL! I like the raunchy people… its easier to shop for! LMAO!

I took some meals out to mom and dad last night for the weekend so that I could free up for shopping. I need to go bulk items and fast! I have a few things to do this morning but I’m packing up the kids & DH and guess where we are off to today? Yep super shop-a-thon at the BIG farmer’s market. Gonna see if I can nab some of those 25 and 50 pound bags of produce for cheap. I’ll share pictures with you when I come back tomorrow.

Ok let’s get crafty, shall we? We’ve talked a lot about recycling and reusable shopping bags comes up a lot. Its like they are the new trend. BUT the thing is, I’ve been making them for years LOL. And I have learned that there are so many things you can make reusable bags out of. Today I am gonna show you how to make them out of a tarp.

Craft Idea of the day: Tarp Shopping bags

1. Cut a piece of plastic tarp 18 x 36". This will give you a finished bag approx 17"w. Fold this in half, right sides together, so that it now measures 18x18". Have it so the fold is at the bottom.

2. In order to make a bottom for your bag, you must fold up the folded edge of your bag half the width of what you want your bottom to be. So if you want a 4" wide base, fold up 2". Secure the fold and sides with tape. Sew both sides with a 1/4 to 1/2" seam. You can sew right over the tape. Remove tape after sewing.

3.Now the top of the bag is your only raw edge. Fold it over about an inch and sew all the way around.

4. Straps: Cut 2 strips of tarp 18" long by about 4" wide. Fold it in half lengthwise, wrong sides together, to get a crease. Open it out and fold the raw edges in and make crease. Tape and sew along edge. Attach straps at desired location on each side of the bag, maybe 3-4" from ends, where ever is comfortable. Sew to the bag securely. Sew over it a few times, since these will get lots of stress.

5. Turn bag right side out. Note: You could purchase webbing for the straps, or be creative and use rope, heavy twine, etc. The average cost of a 6x8' tarp in my area is $4, and I was able to make 8 bags out of it. This comes out to 50 cents per bag.

As an added strength, you could also buy some of the different duct tapes in a wide range of colors and put strips on one side (to be the outside) of the tarp. I recently saw some tie dye that was pretty cool.

And there you have it! Yet another way to recycle and have a unique conversation piece all in one! Ok, time to eat! Do you remember those chickens that were roasted and deboned? Guess what… today is their day to shine! As you know, there are a few things I really love… I have an obsession with my slow cooker/crock pots and I make a lot of soups and casseroles. When you feed as many as I do, it’s nutritious and inexpensive! I also have a thing for Rosemary and fresh garlic LOL! Anyway, here is something that you can complete start to finish in under an hour and it’s a crowd-pleaser!

Farmhouse Chicken Casserole

Ingredients

2 (6 ounce) packages stuffing mix
4 cups cubed cooked chicken
2 (10.75 ounce) cans condensed cream of celery soup or cream of chicken soup, undiluted
1 cup milk
2 celery ribs, finely chopped
1 teaspoon dried minced onion
1/4 teaspoon pepper

Directions

Prepare stuffing mix according to package directions; set aside. Place the chicken in a greased 13-in. x 9-in. x 2-in. baking dish. Combine the soup, milk, celery, onion, and pepper until blended; pour over chicken. Top with stuffing. Bake, uncovered, at 350 degrees F for 30-35 minutes or until bubbly.

Ok everybody, that’s it for me today. I hope you have enjoyed your journey to the center of my Earth LOL! I’m off to market to market but fear not… I’ll be back tomorrow for another cup of OMGisthatpossible! LOL. Be safe in your journeys, be happy, and be alive! Until tomorrow… HUGS!

THE BUSY BEE

Howdy there my friends and family! How are you doing this crazy day of days? I am pretty good actually. I have fresh air in my lungs, so I can’t complain really. I’ve taken the kids to school, fed the cats outside, and watered my plants so far this morning. Remember how I told you yesterday how I was full of spunk and went crazy mad busy? I don’t know why or where the mass energy came from cause I was feeling really bad, but I ran with it (not literally though LOL). Well I am gonna walk ya through my day. Sit down, grab on, and maybe take some Dramamine so you don’t get motion sickness LOL!

First I started the day by taking the kids to school… ok no biggie. Then on the way home, I stopped by Zieglers Foods (the locally owned small grocery store) and picked up some of the great meat buys. I nabbed 4 chickens, on sale for 79c a pound, and 1 pork roast which was on sale for $1.09 per pound. Isn’t that some pretty meat?

So I cut the roast in half and rubbed it with spices and such and set each half up in 2 of the crock pots. Then I seared some stew meat I already had in the fridge defrosting. While that sat resting in the pan, I chopped up some onions, carrot, celery, etc. and through all the vegetables in the last crock with some beef broth, mesquite flavoring, spices, and the meat of course. I topped it with a bay leaf and set it to low. YUMMY Mesquite flavored stew!

Then I seasoned some yard buzzards… more affectionately known as chickens LOL… and roasted them in the oven. I let them cool and deboned and shredded the meat to use in other dishes YAY! LOL.

While the chickens were roasting, I was outside in the garden. Do you know how hard it is to work out there with the aroma of sheer loveliness taunting your nose coming out of the kitchen window behind you? LMAO… ok so in the garden, I repotted my living Christmas Tree and pruned it good. See I HAD it on the front porch, but one of the stray kitties decided to dig it up and spray the pot. UGH! So some of it was dying. So it got a NEW and bigger pot, fresh dirt, a haircut, and lots of water and love! Keep your fingers crossed for him… but no get well cards please, as he can’t read LOL!

Then I removed the Porter Dark Cherry tomato plants OUT of my big planter. The celery was hiding it and it was cramped for space and sun. I put both plants in a big pot and fed/watered it well. I need to get a new cage because I hope now it will explode! As you can see they are much smaller than some of the other plants, which is odd cause they were lanted at the same time. I told ya, the celery was hogging all the dang sun, water, everything! That better be the best tasting celery I have ever had! LOL!

Remember me and my Giant Pumpkin plant? Ya’ll keep laughing… I hear you out there! LOL… I will get a 500 pound pumpkin out of that sucker! JUST watch me! LOL! It has WAY outgrown the 4inch pot I had it in, so it got a new gallow pot of yummy delicious dirt for it to thrive in… hopefully soon this too will need to upgrade! LMAO!

I also repotted my daughter’s regular pumpkin plant. These 2 are on their own now… bigger pots means they can no longer come inside to hide LOL! I’m keeping these 2 kind close together so they don’t get lonely. Not sure what pumpkins say to each other when I’m not around, but I’m sure its something seedy! LMAO!!!!!

No this is not a weed! Its corn! Yes my one lonely stalk LOL… I WILL get me an ear of corn!!!! Pretty soon it will have baby brothers and sisters, but right now it is an only child…. A healthy only child, but still an only child LOL!

I also tied up some berry vines and giggled over my pea pods LOL! (For those of you wondering, no I am not going insane, just having a bit of fun LOL). I did a lot of pruning to my tomato plants as they had some yellow foliage that needed to be discarded. Not sure if underwatering or nitrogen is to blame for the yellow leaves, so I am watching them real close!

Alrighty, so I came back in and took out the chickens. Deboned them and put the meat in the fridge. I sat and checked emails and chatted with my mom for a spell and then I was off! I checked the mail on the way out and I got my $5 Petsmart Gift card I was waiting on… YAY! OK, let’s go!

First I was off to Food Town where I found some BEAUTIFUL bunches of Cilantro on sale 3 for $1… got my 29c chicken bags and a few other in-store specials… one being 3 free cans of corn with my purchase with the coupon from their ad! WOOHOO I like free corn! The lettuce was 49 cents a head, macaroni 4 for a buck, tomato sauce 5 for a buck, and some other good sales too!

From there, I went to H.E.B. to get a few advertised deals. I found it was not fresh chicken thighs on sale for $1 a pound but Chicken thigh meat fajita packages 5 for 5… so I got one of those! Then they had Buy a Natures own bread, get a HEB bread (both Honey Wheat) FREE! Ok, got that in the basket. I also have a coupon for Nature’s Own bread, which made the loaf I had to buy cost only 75 cents! WOOHOO! And were walking… and STOP! I see the strangest thing! Dehydrated OKRA! I mean I have seen dried fruits, but NEVER okra! They were called Okra Snax. I tried one, expecting them to be vomitous but OMG they were pretty dang good! BUT they were $6.99… not exactly frugal, so they had to wait. I just grabbed a handful and wandered in the store LOL. OK so THEN I walk by an end cap which has Buy planters peanuts, get HEB Corn chips (generic Fritos) FREE. Hmmm… ok I get Dry Roasted Unsalted peanuts and will use them in an upcoming dinner… although I don’t quite know what yet LOL. Planters on sale for $2.37 a 16oz. jar and get free corn chips… and guess who just happens to have a coupon for $1.50 off any planters purchase!!! YEP! 87 cents for a normally $4-5 jar of nuts PLUS free chips… I’m diggin this! I also picked up a red onion and ¾ a pound of fresh jalapenos (on sale for 64 cents a pound too!) Time to check out! WOOHOO!

Then it’s off to Wal-Mart. Now this was fun… ok I had 2 free $5 gift cards that I got in the mail… well mom got one she didn’t want, and I got one. The store you had to use them at was too far for her… so she graciously gave me hers. Awesome. So I have $10 in free gift cards LOL! I find Tyson Boneless pork clearance for $4 and you guessed it… I have Tyson coupons! $2 off any fresh meat purchase! Gotta love it! So using one on each package made one of them FREE! WOOHOO! I picked up milk and some other things I needed there too. Grand total at Wal-Mart $11.93 minus $10 in gift cards = $1.93 for 2 packs of boneless pork, a gallon of milk, shredded cheese, 2 packs of tortillas, a pack of cream cheese, and about 10 chicken wings I ate for lunch while on the road LMAO! YAY! GO ME! (Ya got motion sickness yet? LMAO)

Oh, I have another bargain to tell you about too! Petsmart this time… I think this offer is running until the 18th or the 25th… I can’t remember which one. BUT when you buy 30 cans of Friskies or Purina (I think) cat food, you get a FREE reusable shopping bag! You have to make sure to pull the coupon from the shelf display. PLUS use those Friskies coupons fixing to expire on 5-7 and you save even more money… not even mentioning the cans are on sale for 40 cents each now. $12 for 30 cans, minus (at minimum… depends on your coupons) $2 in coupons = $10 for a case plus 6 loose cans of cat food PLUS a free reusable bag (retails for $2.99 I think). Then minus the $5 gift card I got in the mail on a rebate offer = $5 for a case + 6 cans plus a reusable bag! Not great, but not too shabby either. I like how the stores are getting on this reusable bag kick! Save the Earth people… Save the Earth!!!

This is what I ended up with, with the exception of the missing chicken and roast from this morning. Less than $25 for all of that + 2 items… pretty snazzy huh? Now THAT’S a FRUGAL MOM DAY! YAY! And before you ask, yes, my coupon folder goes EVERYWHERE with me… just in case ya know… for days like today! LOL! Time to pick up the kids! Band did well... they got a 1 on their performance (the best you can get) and then the school treated them to CiCi's pizza for lunch afterwards. I thought that was great. The kids all came to me excited about the day! I was very proud of all of them!

Ok, so I get home and get all this stuff put away and go to check the crockpots. Mind you the house smells absolutely to die for! I am rotating the pork and the dang bone falls out! Clean as a whistle LOL! Oh that’s gonna be some good eatin’ in a little while! I made some homemade fresh Pico De Gallo and put it in the fridge to chill. Wrap that baby up in some tortillas or cover it with Chili Con Carne and OMG! Are ya drooling yet? LOL!

So with all this going on, you wouldn’t think I had time for anything else, right? WRONG! LMAO… About 5pm, I get a knock on the door. It’s the daughter of one of my customers, needing a gift basket by TOMORROW at 4pm! A little short notice dontcha think? Good grief. Anyway, so she brings me her deposit and I have to go out again to get supplies. I am really appreciating the crockpots now! SO I fix everyone dinner… I eat too much and don’t want to go out LOL! But I head out on my mission. I walk and walk around aimlessly without a clue on what to do… it kinda hits me, so I get a few things I think will be appropriate and I head home. To exhausted to work, I make sure everything is put up and cleaned up and then the DS18 comes and asks me some very odd questions. 45 minutes of questions and answers and then they are off to bed… and so am I! The end to a very exhausting day! So this morning I have to assemble a “flirty” basket for my customer. I’m not sure what else I should do today… but I am wondering if I should fire up the crocks again LMAO!

Now crafty time… I figured I would stay with recycled crafts until Earth day. I know when I did the big recycled crafts weekend, everyone was really super cool into it, so I figured what’s a few more? LOL! Here is a really spiffy idea for some outside lights for things like BBQ’s and parties (color coordinate cans for more appeal LOL!). Just be careful… don’t play with fire and NEVER leave it unattended!

Craft Idea of the Day: Soda Can Lanterns

Materials:

Soda Can
Wire
Exacto knife
Candle

Directions:

First what you do is, you fill the can (not all the way though) with water and freeze it.

Then you cut the sides of the can with an exacto knife or box cutter.

To hang it, you have to leave the pop tab on and use that to attach some picture wire.

To be able to put a tea light in there, you have to hollow out a little niche for it because the bottom of the soda can is convex on the inside.

I just stuck a screwdriver through the top of the can and banged it out. it doesn't look too pretty but once the candle is in there, you don't see it anyway so it doesn't matter.

Isn’t that the coolest thing? You could use Pepsi for the patriotic holidays, Sunkist for Halloween, Squirt for Luaus, Big Red for Valentines, you name it! Now, I don’t know about you, but I am really really craving something sweet! Chocolate and sugar and OMG yummy deliciousness! I know back in the day, a favorite of my mom’s was eclairs. Well here’s how to make a really big éclair at home LOL… Just remember cut it into pieces! LMAO!

Chocolate Éclair Cake

Ingredients

2 individual packages graham crackers
2 (3 ounce) packages instant vanilla pudding mix
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed
4 ounces unsweetened chocolate
4 Tablespoons butter
4 Tablespoons white corn syrup
6 Tablespoons of milk
2 teaspoon vanilla
3 cup powder sugar

Directions

Line the bottom of a 9x13-inch pan with graham crackers. In a large bowl, combine pudding mix and milk. Stir well. Stir in whipped topping to pudding mixture. Spread half of mixture over graham cracker layer.

Top with another layer of graham crackers and the remaining pudding. Top all with a final layer of graham crackers. Melt chocolate, butter, corn syrup and milk. Stir in vanilla and sugar. Spread on top of dessert.
Refrigerate until serving.

Ok, now that I am drooling for some chocolate, I’m gonna get off here and go work on putting that basket together and starting my day. I’ve got some parting wisdom for you today… NEVER leave the Ben-Gay by the Preparation-H… it can be a very HOT experience! LMAO! See ya tomorrow… HUGS!

BARGAINS BARGAINS EVERYWHERE!

Well good morning everyone! It’s the dreaded TAX day! Have you gotten your taxes completed and mailed in yet? Me… done, not worried… gonna have a better day than most people LOL! So how you doing today, really? So glad you came by! Here, would you like a cup of coffee or tea? Let’s chat shall we…

I’m sorry I am a bit tardy today… I’ve already been a busy camper. I dropped off the kids at school and stopped by the little store I told you about, Zieglers, because they have whole fryers on sale again for 79c a pound. Picked up some birds and a beautiful pork roast for $1.09 a pound… it was inspiration for dinner LOL! Then I came home and set up the beloved crocks, threw some birds in the oven to roast, chopped veggies, etc. and now I am here for your entertainment! LOL! I have 2 crock’s of todays recipe, Carnitas, going, one of a mesquite beef stew, a T-bone marinating, chickens roasting, chicken legs soaking, and ribs resting LOL! I still have to make some homemade Pico De Gallo and do some other things but it will be interesting. I also want to run to Food Town at some point today because they have leg quarters on sale for 29c per pound in a 10lb bag! WOOHOO! Its chicken roundup/stockup time! I have no problems with that because boy can these people eat some chicken LOL! I also heard HEB has chicken THIGHS on sale 5lbs. for $5… so I might try going there too… as my dad is a serious thigh lover- nothing but thighs LOL! We shall see… I think I might also squeeze in trying to make some jelly (if I even have pectin LOL)! The rest of this week I think will be a “Use-it-before-you-lose-it week”! So got some marathon cooking ahead gang! FUN FUN!

Ok my little bargain hunters… you may not be able to get the good meat deals at Zieglers or my Food Town, but you need to watch your emails for the Home Depot Garden Club email… guess what you get free this time! A TREE! Yes you heard me… Buy 1 Get 1 FREE TREE!!!!!!! OMG I am so super stoked! Remember I talked about planting a tree for Earth Day… well there ya go! There are lots of places to get free stuff this tax day! Check this out!

Free treats and more for taxpayers

NEW YORK (AP) -- Few truths are more universal: No one likes to pay taxes, and everyone loves to get things for free.

Restaurants and other retailers are offering freebies to reduce people's angst over their income taxes -- which must be postmarked or e-filed by Thursday.

From cupcakes and pancakes to dinners and coffee, the offers are meant to help people feel better as they help companies drum up business. No paperwork or proof is required for most of the offers.

Ice cream chain MaggieMoo's is giving away pieces of its new ice cream pizza in its second annual tax day giveaway. The company won't say what it cost to give away thousands of free scoops of ice cream at its 160-plus stores in 2009, but a spokeswoman says such promotions bring in new guests and new sales.

"They'll have free ice cream and then they'll get a drink or a smoothie or something else or take home an ice cream pizza," says Jenn Johnston, senior vice president of marketing for NexCen Franchise Management, the parent company of MaggieMoo's, Pretzel Time, The Athlete's Foot and other chains.

Here are some of the freebies and discounts on offer for tax season 2010.

-- FREE COFFEE AND TREATS

CINNABON: Get two free bite-sized cupcakes from 6 p.m. to 8 p.m. Thursday at participating mall locations as part of "Tax Day Bites!" Flavors include Chocolate Passion, 24-Carrot Cake, Vanilla Bliss and Cinnacake Classic.

STARBUCKS: Get free brewed coffee all day Thursday if you bring your own mug, a promotion the cafe chain says is friendly to the environment as well as taxpayers.

-- DISCOUNTED MEALS

BOSTON MARKET: For a "last-minute tax break" -- one free meal for each one you buy Thursday through Sunday -- show this coupon: http://bit.ly/d1YlRO

IHOP: Expanding on the tax deduction parents get for kids, the restaurant chain is offering free dinner for one child age 12 or younger with each adult meal purchased 4 p.m. to 10 p.m. all month long.

MCCORMICK & SCHMICK'S: The seafood restaurant is offering $10.40 dinner and drink specials in the bar on Thursday -- a nod to the 1040 tax form. Bar guests who come in April 15 also receive a $10.40 gift certificate for a later visit. And professional tax preparers, who may have to work right until the midnight deadline Thursday, get their freebie Friday: dessert on the house plus a $10.40 certificate if they show a business card.

-- STRESS RELIEF

HYDROMASSAGE: Get a free massage Thursday through Sunday at participating locations. The mall-based massage chain suggests calling ahead to book an appointment. Find a location at http://www.hydromassage.com/taxday.

Now sticking with the Earth Day, recycling to me is fun and helpful. I am a big believer in repurposing things that still have life! SO, guess what today’s idea for a craft is? It’s a use for those old coats… either you or the kids outgrew them but you can’t bare to get rid of it? Well now you won’t have to (Hmmm… wonder if I am actually contributing to the hoarders of the world LMAO! J/K)!

Craft Idea of the Day: Recycled Coat Messenger Bag

Materials:

1 old, full length Parka.
Any bright lining, contrast fabric you want
Matching Sewing thread and machine

Directions:

1) Lay out your coat flat on floor and take a good look at it, imagining it in peices, not a whole.

2)Cut a large front section with pocket to be the front of the bag.30cm wide x 40cm long.

3)Cut a long back piece to be the back of the bag, including the part that will fold down over the front.
30cm wide x 60cm long. plus a matching size in the contrast fabric.

4) Cut the sleeves cut to width 20cm, for the side panels, I included the cuff buckle.

5)Cut 68cm length of buttonhole section from down the front of the coat as a handle. Plus a matching length of contrasting fabric

6) Sew the two ends of sleeves together, leaving the cuff end as the top part of bag sides.

7) Attach front panel(with pocket) to what you designate as front of side panels, fold over any spare at top and sew, do this double thick stiching.

8)Attach contrast fabric to back panel (face both back to back, stitch, turn right way round) and do same to buttonhale handle.

9) Stitch back panel to side panel so you have a long flap hanging over the front.

10)Attach handle to side panels, add velcro to front as easy fastener.

Isn’t that just slouchy cool? Ok its time to eat ladies and gents! Tonight is another slow cooker love affair LOL! One of the things I am making is a “fix your own taco” bar tonight, because after UIL, I anticipate some of the kids “coming home” for dinner and celebrations LOL! One pot, I am making Carnitas. Carnitas means 'little meats' and is traditionally fried then braised. This recipe is made much easier using the slow cooker but the results are just as tasty. This makes a great filling for tamales, enchiladas, tacos and burritos. This filling is also great combined with your favorite barbecue sauce and served on buns

Slow Cooker Carnitas

Ingredients

3 teaspoon salt
3 teaspoon garlic powder or 4 fresh minced garlic cloves
3 teaspoon ground cumin
1 1/2 teaspoon crumbled dried oregano
1 1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1 (4 pound) boneless pork shoulder roast
2 bay leaves
2 cups chicken broth

Directions

Mix together salt, garlic powder, cumin, oregano, coriander, and cinnamon in a bowl. Coat pork with the spice mixture. Place the bay leaves in the bottom of a slow cooker and place the pork on top. Pour the chicken broth around the sides of the pork, being careful not to rinse off the spice mixture.

Cover and cook on Low until the pork shreds easily with a fork, about 10 hours. Turn the meat after it has cooked for 5 hours. When the pork is tender, remove from slow cooker, and shred with two forks. Use cooking liquid as needed to moisten the meat.

Ok kids… my house smells amazing already and I think I need to go check my golden yard buzzards LOL! Then maybe do some sewing while the kitchen works for me… I know its hard to slave all day in the kitchen to make my family a fabulous feast and still get so much else done LMAO! Gonna think about running to grab some more birds and bird parts while the hubby guards the pots LOL! Dunno yet what the day will hold in store for me LOL! Either way, it will be interesting! So be safe, have fun, and I’ll meet you back here tomorrow! HUGS!

SCATTERBRAIN

Well Good morning everyone! I hope you are doing well today. I’m doing well I guess LOL. Very tired and a little stiff, but its alright because I woke up and I’m alive! I want to thank Jean for the wonderful gift of Brandywine seeds! I plan on planting a set this evening once I get home from picking up kids, etc. Right now I have so many things to share and going on in my head, I am a real scatterbrain today! Let’s see if you can keep up LMAO!

OK, I had a lot of emails asking about the Ronald McDonald thing I mentioned yesterday. So I sat down and really thought about it. Here is what I am gonna do. First thing is I am going to contact the director at the Galveston Ronald McDonald house and ask about number of children, tenants, families, etc. Then I am going to take both kinds of fabrics.and plan on making crayon totes, burp clothes, and whatever else I can make with the McD’s fabric. I must be careful to use the fabric wisely LOL! OK, so then I am also going to go to Wal-Mart and price things like Crayola crayons, colored pencils, etc. to fill one of the totes. That times how many totes I will be making is what this “Project Ronald” will take. I know that when the school supplies go on sale, the crayons are like 20 cents per box, so if someone gifts $4 and I need to make 20 totes, then that $4 will buy ALL the crayons! I am also going to get a copy of their wishlist and buy a few things for the house, like paper goods, flour, etc. and donate that as well. I know I saw paper towels, etc. so we will see how much money we can raise for them. Cool huh? I have set up an Etsy account, but I haven’t listed anything on there yet (haven’t had the time LOL). Everything I make off selling things on Etsy from the day I start selling until Sept. 1st will be funding for this project. I am going to ask some of my “band kids” if they want to help in either distribution or something. Hopefully I can get pics of the gang outside the house… I think it would be a good experience for them all. Anyway, I will let you know when “Project Ronald” is officially started!

Ok, so I did a bunch more sewing yesterday… continuing the Fabric Challenge. I was going through the green crate and found some half finished projects that I figured I would conquer yesterday. I don’t know WHY I start something and don’t finish them like this! Its kind of annoying when I go back and see this! What WAS I thinking?? Anyway, Lookie Lookie what came off my creative little fingertips!

This was not a half started project, but it WAS an old shirt that my mother found in a box in the attic when we were cleaning it out. Jameson’s is an Irish Whiskey for those who don’t know. So anyway, since it also said St. Patrick’s Day on the shirt, I figured a green shamrock fabric was in order. Did this turn out absolutely adorable or what?! I’m gonna have a hard time selling this one. LOL I showed it to mom last night and she said I should find other “vintage” shirts and do the same thing. LOL, guess she really liked it too! I have done T-shirt bags before, but for some reason this one turned out absolutely wonderful! Hmmm... maybe its the color... who knows LOL!

This is a set of 5 baby burp clothes tied up with a “It’s a Girl” ribbon. I make these and either sell them separate, as groups like this, or even in baskets, etc. They are very soft, contoured to fit mom’s shoulder, and 100% machine washable!

These are 5 cell phone pouches that I had to complete. I only had the fabrics cut and all the stuff laying together, so I sewed them, strapped them, snapped them, and voila! 5 totally awesome cell pouches!

This is the Sunflower casserole cover made from 2 tapestry place mats. My mom likes sunflowers and when I saw these mats, I thought of her!

This is the “fat chef” tapestry casserole cover. Apparently this little dude is very popular in kitchen décor nowadays. I just bought it because I thought it was cute LOL!

And this is the snowman tapestry casserole cover. I had lots of covers ready to be sewn together in the box. There were 7 total I think. I only got to these 3, so watch for the others in the next couple of days.

These are 9 drawstring bags that I finished today. The story behind these easy little guys is simple. A couple of my DD’s friends needed something to hide their pads and other feminine stuff during a school trip. I had these little drawstring bags I made. Then I got the idea to put travel size toiletries of all kinds in them and use them for donations to places like the women’s crisis center and the men’s homeless shelter. I would use coupons and get trial size toothpastes, toothbrushes, etc. for free or for just pennies and then make up these cute bags and donate them. I normally whip out at least 100 of these per year!

Here you see the 2 insulated can wraps I made yesterday. Tinkerbell and John Deere… neither is a particular favorite of mine, but they are very popular so I continue on! LOL… Good thing there isn't too much more of these fabrics left LMAO! Kidding... don't want to offend anyone... I'm just in a playful mood today LOL!

This is a set of Autism hand towels, which could also be used for other purposes I suppose. I just liked how the green compliments the bright puzzle pieces! Lovely… and another autism craft down too!

As you can see I was a busy little bee yesterday. I didn’t get everything completed that I pulled out of the crate that was half done, but I made a super huge dent… I would say at least ½ of it. I know that I have about 3 or 4 casserole dish covers and maybe 10 other things. I don’t know why I do that… start something and not finish it, especially when there is either not much left to do or not much to do in the first place. Crazy I know, but see this Fabric Challenge is helping me get all this done and build my inventory too! Awesome huh? I think so… and I am coming up with some super cute stuff if I do say so myself LOL!

Ok so I was taking a sewing break and reading on the yahoo local news yesterday and I ran across this census article and I just had to go WTF?? I’m sorry but I need a vent moment… Read some of this bologna!

Census Bureau officials urge patience
By Ian White
The Daily News Published April 10, 2010

Anyone worried about their participation in the census can rest easy — there’s not a problem the Census Bureau has not thought out, an executive for its Houston-Galveston area office said.

“Whether you’ve received no form or more than one form, there’s no need to worry,” said Eduardo Guity, the bureau’s area media specialist, when The Daily News put to him three potential problems identified by county residents.

He called on people still awaiting a form to be patient, saying the bureau still is mailing them, but they should arrive by Monday.

The bureau will be following up at addresses from which it has received no reply by April 15, and Guity said: “We’re going to get the information come what may.”

And in answer to a common perception that mailing each form is costing the taxpayer $57, he said: “Mailing each one costs us 44 cents. The $57 figure is the cost of sending someone to an address from which no form has been received, which is why we’re encouraging everybody to mail their completed form to us as quickly as possible.”

The bureau is prepared to send an inspector to each unresponsive address up to seven times, after which neighbors will be asked about the number of residents at the errant property.

“We’re authorized by law to do that,” Guity said. “Usually at least one neighbor knows how many people live next door, so we will complete our count one way or another.”

ARE YOU SERIOUS? This man is really that ARROGANT? I mean come on, does he realize the things he just said? Someone please tell me why this man is telling people to “be patient”?? They’re the ones wanting the information… not me! Shouldn’t THEY be patient? If I want to fill it out a week after I get it, HE needs to wait, right? Then they are gonna invade your privacy and ask NEIGHBORS? OMG really… REALLY? OK I gotta change the subject now, before I blow a gasket!

Crafts… as you can see from my challenge projects, I love them! I like seeing bits and pieces of “nothing” and knowing I can put them together in some way, shape, or form, and turn them into something really cool or useful! And I like recycling too! LOL I can think of only one good thing that could come out of my pakrat/hoarding problem… I can make all kinds of neat recycled crafts! LMAO… ok seriously though, recycling- to me anyway- makes you feel good. You’re not being wasteful and you are being creative… unique even! You are going to have something that maybe nobody else has! And that’s an AWESOME feeling! The little kid in you comes out and goes “Nanner nanner boo boo” LOL! So what is the craft today? Well if you have any old vinyl LP’s laying around that you’re just not sure what to do… try this! It would make an awesome gift for yourself or a friend… especially if the friend is old enough to really APPRECIATE what a vinyl record really was/is! Records can be bought from op shops, thrift stores or garage sales. If you don't want to destroy the classics look for damaged or cracked albums.

Craft Idea of the Day: Vinyl LP Earring Holder

Materials:

Old LP Record
Heat Source
Knitting Needle or Metal Skewer
Plate Stand

Directions:

1: Take your LP Record and place some heavy cardboard behind it. This will prevent the metal skewer going through onto your work surface

2: You will need a heat source, either a lighter, candle, Gas flame or you can heat a knitting needle or metal skewer up on a electric hot plate but be very careful and wear oven gloves to prevent burns.

3: Take your Hot Needle and poke it through the record to make a whole. You obviously want to make your holes in sets of 2 for each pair of earrings.

for smaller studs you could use a heated darning needle. Place as many holes as you need around the record. if you want to hang bracelets you can make a hook using a heated nail and pushing it into the record and allowing it to cool. This will give you something to hang necklaces on etc.

When completed allow all the holes to cool completely.

Place it onto a plate stand and onto your dressing table.
You could also create a hole for a hanging ribbon at the top so that you can make a hanging loop. This will allow you to carry around the record from bedroom to bathroom or even to hang it up out of the way when not in use.

Is that not cool or what? I like the bowls you can make with old LP’s too. Nowadays, having something “old” is really the new cool. Us older “cats” LMAO just call it vintage or retro… but some of the young buzzards call us antiques or old! I prefer retro thank you! So I remember the days of playing my old vinyl records and dancing around my room and if I jumped too hard the record skipped and Rick Springfield went from singing about a girl to a dog LMAO! Hey don’t laugh, he was cute back in the day! LOL… but then again, didn’t our moms say the same about Donnie Osmond? EWWW! LMAO!

OK let’s talk food. Its always a good time for slow cookin! As you know, if it weren’t strange, I would probably marry my triple crockpot! LMAO… JUST KIDDING! Anyway, yes I love them and I love to share crock pot recipes with you. A big thing around here to make, seeing as we always have tons of people coming through here, is soup. You can make soup pretty inexpensively most time and it feeds a large crowd. So if I have 10 hungry kids running around between band practices and football games, etc. I try to make sure to have at least one pot for them to munch. Most of the time however I have numerous crock pots going, a stovetop of pots, and even sometimes things in the oven… cornbreads, rolls, etc. to go with their soups. Even the “cool mom” as they call me, has to make sure they get a good meal! So today I have another soup recipe for you to enjoy.

Albondigas Soup

Ingredients

1 pound lean ground beef
1/4 pound pork sausage
1 onion, chopped
1 egg, beaten
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/4 cup milk
1/4 cup chopped fresh basil
1/2 cup cornmeal
6 (14 ounce) cans beef broth
1 (8 ounce) jar salsa
1 onion, chopped
2 (14.5 ounce) cans peeled and diced tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/2 cup white rice

Directions

Mix together beef broth, salsa, 1 onion, tomatoes, dried basil, oregano, and 1/4 teaspoon pepper. (If you use condensed beef broth (e.g., Campbell's), eliminate the salt in the meatballs and use 5 cans (10.5 ounces each) broth plus one quart water.) Bring to a boil and simmer 20 minutes.

Combine ground chuck, sausage, 1 onion, egg, salt, 1/4 teaspoon pepper, garlic powder, milk, fresh basil, and cornmeal, and mix well. Form into tiny, bite-size meatballs.

Add meatballs and rice to broth. Simmer, covered, very slowly for 1 to 1 1/2 hours.

Alright kids, I’m outta here for today. Gonna go chill out with my mommy while the DH stays and does his housely manduties! LMAO! I will see you tomorrow for more great adventures in blogland! Peace, Love, and lots of HUGS!

SWEEPSTAKES BONANZA

Good morning everyone. How are you doing this wonderful morning? I’m braced up like Frankenstein, but I’m alive so we’re good! I hope you are all well. I want to thank my mother for that very touching comment she left me yesterday! You made me cry mom! LOL… but it’s a good cry! My family and friends know that whenever I can help, I will be there regardless of anything else! I’m glad to help! I love you mom! And today’s blog is in honor of that phenomenal woman who brought me into this world, taught me everything I know, and has always been there for me… my best friend! Thanks mom!

Well Earth Day is April 22nd this year and we should all do a little something in honor of it (I think anyway). My mom received this email and sent it to me. It’s from H-E-B and it said “Stop by your H-E-B on April 22 between 3-7 pm to drop five plastic shopping bags into our storefront recycling bin and get one reusable shopping bag free, while supplies last.” SO, if you have a H-E-B around you, call and ask if they are going to be a part of the Earth Day giveaway! I think it’s a great idea!

There are other things you can do in honor of Earth Day as well. I think the Arbor Day Foundation does something similar, but have you ever personally thought of planting a tree? Maybe a fruit or nut tree in your yard? Not only are you replenishing the trees, but you would get fruits and/or nuts to enjoy. Just a thought ya know… Google Earth Day and I bet you can find lots of ideas.

Another great idea, is again from my mom… sweepstakes. What harm can it do in entering and taking a chance to win something you might really need or just plain WANT! If it’s free, I say NOTHING! Did you know there are literally thousands of sweepstakes you can enter on a daily basis all over the place? I thought today, I would bring you a few of them here. What do you have to lose right? It just takes a few minutes of your time and its free! Who knows, you might actually win something! It shocked the tar out of me when I won a gas grill from Marlboro one time! So have fun and good luck!

Guess what I did yesterday? You guessed it… I was back on the sewing challenge. I swear every time I turned around and looked in the green crate I found another pile of material that was pre-cut to make shopping bags LOL! I didn’t get an enormous amount done, but the ones I did get done were pretty snazzy I think! Check these out!

This is the Kitty Klaus tote bag I made from a pillow panel I found in the crate. I had 2 sets of the panels, so I made it into a bag. The sets had 6 different pictures, so I might make totes out of all of them or pillows or who knows yet LOL! But I know it had cows and dogs as well and something else I can’t remember LOL!

Here you see the Native American/Eagle shopping bag. It’s funny that I had enough to make a bag out of this one really. Now you see what my DH’s Christmas stocking looks like! LMAO! It’s actually a really cool fabric (SHHH don’t tell him I said that! LOL)

Now ya know, I had to do at least 1 patriotic print bag, right? Of course. I found this one rolled up on the side of the crate already cut and ready to go. Sew LOL I sewed it together and I think it’s actually pretty neat! I like the multi-colored webbing for straps. Gives it just that right amount of WHOA factor! LOL!

Ok this bag got my brain exploding with ideas! This is a purple Ronald McDonald fabric I found at Wal-Mart years ago, before they got rid of their craft section (which really depressed me btw LOL). They had this one and I have a red one too. This bag was already cut, so while putting it together I had an explosion of thought come into my head! I have to have probably 6+ yards of EACH of the McDonalds fabric right? Well remember those crayon totes I was making?? HELLO! Make some in the McDonalds fabric and fill them up with crayons and such when the school supplies are on sale super cheap and I have DONATIONS to the kids at the Ronald McDonald House!!!!!! I’m gonna start on those right after I get this challenge complete and I am actually going to ask my wonderful readers to consider helping with a small donation for things like crayons, coloring books, etc. You can send the actual items or you can send a financial “gift” (I can’t legally call it a donation, sorry). I’ll let you know more about this idea when I get it worked out better… still in the preliminary stages of this idea LOL!

Ok now, I want to talk crafts. With Earth Day coming up, we must be in the “recycle” and “earth friendly” mindset! So I am double duty-ing this craft project today! I am honoring Autism Awareness with the Puzzle and Earth Day with the recycling! This recycled craft project is a great way to recycle those old puzzles that have pieces missing. This project uses a Jumbo piece from a child's jigsaw puzzle.Check it out!

Craft Idea of the Day: Puzzle Photo Magnet

Supplies:

Large Puzzle Piece
Magnet
Cardstock

Directions:

Start by cutting a window into the puzzle so that you can insert your photo. You can cut it using some scissors or a craft blade.

Paint the puzzle piece then allow it to dry, You can finish it off with a spray of clear varnish.

Run some glue around the back of the puzzle and secure your card stock to the back of the puzzle piece.

Glue on your magnet piece, You can get magnets from your local craft store or use a recycled advertising magnet.

Cut your photo to size and you can now slip your photo into the frame from the front.

You can decorate your frame further by adding small puzzle pieces, cut out hearts etc.

Pretty nifty huh? OK ok I hear you… no not you… My STOMACH! It’s yelling at me and telling me it needs food LOL. So I am always ready to serve LOL! I’m in the mood for pancakes… but not just any pancakes- we are going gluten free today!

Delicious Gluten Free Pancakes

Ingredients

1 cup rice flour
3 tablespoons tapioca flour
1/3 cup potato starch
2 cups almond milk (or 2 cups water and 4 tablespoons dry buttermilk powder)
1 packet sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon xanthan gum or 4 Tablespoon gluten substitute
2 eggs
3 tablespoons canola oil or applesauce

Directions

In a bowl, mix or sift together the rice flour, tapioca flour, potato starch, sugar, baking powder, baking soda, salt, and xanthan gum. Stir in eggs, milk, and oil until well blended and few lumps remain.

Heat a large, well-oiled skillet or griddle over medium high heat. Spoon batter onto skillet and cook until bubbles begin to form. Flip, and continue cooking until golden brown on bottom. Serve immediately with condiments of your choice.

So are you drooling now? LOL I am… alright I am gonna get off here for the day. Time to do some more sewing, check my garden, and whatever else may strike my fancy. You keep safe, be happy, and I will see you back here tomorrow! HUGS!

CRAZY 4 COOKING

Good morning everyone. How is my favorite group of people doing today? I’m here… let’s just say that. Got some problems, but otherwise, ok today. But I can those problems are really gonna hinder my production today. So anyway, I’m glad you stopped in. Sit down and stay awhile… let’s chat!

Ok, time to address some things here. To SUSAN- congratulations on the upcoming baby boy and way to go for doing what you have to do to survive. Believe me, it WILL get better. Also major kudos for sneaking in those veggies! LOL do what you have to do. Make sure you teach those babies what each veggie is and you never know, they may grow to like them as they get older! If you have problems with them eating veggies, have you ever tried purees? My autistic DS14 has a problem eating some veggies and so I puree them and put them in things he likes. Like I do butternut squash and other things in his Macaroni & Cheese, zucchini and such in his spaghetti sauce, etc. There is an excellent cookbook called “Deceptively Delicious” by Jessica Seinfeld which shows you what you need to puree, how to puree, what you can make with them, etc. Definitely a useful tool!

As for your upcoming bundle… all those names are great! I have always been partial to the Latin names Benito and Javier personally LOL! And a HAPPY LATE BIRTHDAY TO YOU! I did not know that little thing about Rosemary… that would have been very useful when my kids were little LOL! As for “knockoffs” or “Copycats” as they are respectfully called LOL, no clue. But I bet you could look up “homemade remedies with rosemary” on google and probably find something!

Now the wild onions, yes they are in the same group. They have a mild taste… similar to leeks (which are also in the onion/bulb group). As a matter of fact, they are officially called “wild leeks” LOL! They can be used in place wherever green onion or leeks are called for. They have a very strong odor, but will not make you cry like normal onions. I’ve used them in numerous dishes since I picked them and nobody has been able to tell the difference in this house LOL! Don’t you just LOVE farmer’s markets? Yes the ones you find there with the larger bulbs are another variation of the green onion. We get those at our markets here too, with the bulbs as big as golf balls! This picture shows the last ones we got at the market. They come up from the valley and they are oh-so-sweet!

And finally, as for the Garden Contest, I am sad that nobody was entering properly or even really interested, so we just decided to cancel it. I will be coming up with another idea soon though, so make sure to stay tuned for that.

Well, since I do call myself “The Frugal Mom”, I want to bring you some more frugality LOL! I actually found this article and wanted to share it with you!

Slash Your Grocery Bill and Still Eat Well
SELF.com
By Lucy Danziger

These days, calories probably aren't the only thing you're trying to cut back on. Thanks to the dicey economy and rising price of food, a lot of us are trying to limit what we spend, too. For instance, I used to buy the berries I eat for breakfast at the little local market, but found out I could save a small fortune if I went to the big superstore-and they are just as fresh. Fortunately, you can reduce the amount on your receipt without resorting to a diet of ramen noodles. In fact, by knowing just a few frugal secrets, you can stock your cart with nutritious foods for less. Try these tips to shrink your bill and still get your healthy fill.

Make it snappy
Shoppers who spend more than 30 minutes wandering the aisles are prone to spending more money at the store-and coming home with more items they don't need. Shop once a week, make a list and tick it off quick!

Use a basket
If you do need to make a pit stop at the store for a missing ingredient or two, grab a basket rather than use a cart to avoid impulse buys. Better yet, carry your goods in your hands!

Be picky about your protein
Rather than spend on pricey cuts of chicken and beef, buy a whole organic roasted chicken your family can enjoy for days. Eggs, too, are an inexpensive source of both protein and vitamins A and D. At about $2 a dozen, they won't crack your budget.

Think beyond the produce aisle
Canned and frozen veggies are packed at their nutritious peak and can last up to a year, so they're safe to stock up on during a great sale and cost less than fresh. Keep canned beans, peas and tomatoes in your pantry and bags of mixed veggies in your freezer. Build your meals around these foods to eat well while sticking to your budget.

Buy healthy foods in bulk
In my experience, whenever you have more of a food on hand-nutritious or not-you tend to eat more of it. While a jumbo-sized tub of chocolate-chip cookie dough won't do your health any favors, sales on healthy staple items like beans, soup, whole-grain cereals and frozen vegetables sure will, so pounce when you spot a price cut.

Eat organic selectively
If the price of organic food concerns you as much as the pesticides on regular produce does, relax-you don't need to go into debt to lower your intake of chemicals. "Allocate your organic dollars toward thin-skinned picks like peppers and apples, which are likelier to accumulate chemicals," says Urvashi Rangan, Ph.D., a toxicologist and environmental health scientist at the nonprofit Consumers Union in Yonkers, New York. Buy non organic thick-skinned produce, such as oranges and bananas, since you peel it anyway.

Check yourself out!
Women who rang up their own groceries spent 32 percent less on high-calorie impulse buys such as chocolate at the cash register, finds a study by the IHL Consulting Group in Franklin, Tennessee. If your store doesn't have self-service lines, keep busy with a mag to avoid grabs for candy. Healthy, thrifty shopper in aisle three!

So what do I think? Yea this article has some good advice, some common sense advice, and then there is the things that have been omitted! Like GROWING your own food! Even if it’s just tomatoes, if you figure how much you save, you would be shocked! Let’s take cherry tomatoes… a bag of about 20 tomatoes here costs $3.99… so $4 gets you 20 that you must use within “X” days or they go bad. NOW… take that same $4 or even maybe LESS and invest in 1 or 2 (should get 2 so they pollinate and flower better) cherry tomato PLANTS. If cared for properly, it will put off tomatoes all spring and summer long… giving you crops of 40 or more at LEAST! Want to go even MORE frugal? Start those plants from a seed packet that only costs 99 cents and you can have TONS of plants! You can’t beat that! So why isn’t logic like this mentioned?? Is society really that logically impaired? Oh well, we know better, right?

Now, let’s get crafty. This is a great project you can make for your kitchen to match fabrics and protect your appliances. Keep dust and any other unwanted stuff out of your toaster with this cute cover!

Craft Idea of the Day: Fabric Toaster Covers

Measure the size of the end of the toaster as shown by the red lines in the diagram. Be sure to include the length to the counter top. Add 1/4" seam allowances to the two sides and the top to allow for seam allowances.

Determine the width of the toaster. Be sure to include any knobs that may protrude. This will be the width of the continuous strip that is attached to the ends that were measured in the above step. Add a 1/2" for seam allowances.

To determine the length of the continuous strip, measure the height and width of the end section described above. Two of the height and one of the width gives you the length BUT it is advisable to add a few inches. Any extra can be trimmed off after it has been attached to the end sections but you can not add fabric once it has been cut.

Needed Materials:

-Most toasters will need approximately 2/3 of a yard of 45" wide fabric - I quilted a cotton calico, using natural cotton batting. For a stiffer cover, you may want to experiment with fusible interfacing.

-Piping - I used 1 pkg. of Wrights® Maxi Piping

-Double Fold Bias Tape - I used 1 pkg of Wrights® Bias Tape Extra Wide Double Fold.

-Matching Thread

Directions

Cut two end pieces and one continuous strip of fabric to the measurements you took in the above step. Apply piping to the end sections. Find the center top of the end sections. Match the center of the long section of fabric with the center of the long side of the continuous strip. Sew the sections together from the top to the bottom edges. Repeat for both ends of the cover. Trim off any uneven edges if necessary. Apply Bias tape to the bottom edge of the cover.

Well I have to tell you, I had a major plan change yesterday, so I stayed home and did some mass cooking (which you all know I like a whole lot!) so I could take some meals out to my mom and dad in the evening. I made more Ropa Vieja, Meatballs, Sausage and Crawfish Jambalaya, Chicken Tortilla Soup, Chili, and Squash Casserole. Gotta love those crockpots! Of course the stove was covered too, inside AND out LOL! I don’t mind… I love cooking! I made the meals and ran them out there, along with mom’s cake. I think she liked it LOL. The squash Casserole was something new for them and they really enjoyed it (at least they said they did LOL!) so I wanted to share it with you, even though casserole week is over. I think even the most finicky of people will enjoy this because its got veggies, but lots of cheese too!

Creamy Squash Casserole

Ingredients:

1 large butternut squash (about 2 ½ pounds), peels and cut in bite-size pieces
2 teaspoons chopped rosemary or thyme
1 small bag of fresh baby spinach, chopped or 10oz. frozen spinach thawed and drained
2 Tablespoons olive oil
1 jar Ragu Classic Alfredo sauce
½ cup chicken broth
2/3 cup Parmesan Cheese
3 tablespoons Ritz crackers or fresh bread crumbs

Directions

1. Preheat oven to 400 degrees.

2. In a large bowl combine squash, spinach, olive oil and rosemary. Toss to coat well in oil. Place in glass baking dish (I used an aluminum pan LOL).

3. In the same bowl, combine Ragu Alfredo sauce and chicken broth. Whisk until well blended and creamy. Pour mix on top of squash mix in pan.

4. In a smaller, dry bowl, combine crumbs/crackers with the Parmesan cheese and blend well. Sprinkle on top of pan to make the “crust”.

5. Bake in oven for about 45 minutes or until squash is tender and sauce is bubbly. Allow casserole to sit for 5 minutes before serving.

OMG, DS18 who SWEARS he hates butternut squash devoured this casserole LOL! So give it a shot! Ok now, if you haven’t already guessed, I am a sucker for Chinese/Asian food. I would LOVE to be able to eat at my favorite little Chinese restaurant down the road at least once a week, but the reality is I cannot afford that. Nobody really can nowadays. Society is reverting back to home cooked meals, which I think is wonderful! I wouldn’t mind seeing some of those distasteful fast food grease spoons go by the wayside (I will NOT mention names as I don’t want to ruffle any corporate panties that may run across this blog!). Healthy eating and cooking at home is the way to go! However, there are those select FEW restaurants that you just hope and pray don’t ever leave you! Szechuan Garden in Dickinson, TX is one of those places! The staff is awesome and the food is excellent! If you’re ever down this way, you HAVE to check it out!

Alright, so anyway, seeing as I have a weakness for Asian foods, I am always trying new recipes to get that delicious feeling of oriental yumminess! So, here is another one I think you might enjoy! Its just the right crispiness and oh-so-melt-in-your-mouth-good!

Perfect Sesame Chicken

Ingredients

2 tablespoons all-purpose flour
2 tablespoons cornstarch
1/4 teaspoon baking soda
1/4 teaspoon baking powder
2 tablespoons low-sodium soy sauce
1 tablespoon dry sherry
2 tablespoons water
1 teaspoon vegetable oil
1 dash sesame oil
1 pound skinless, boneless chicken breast meat - cubed
1 cup chicken broth
1 cup white sugar
2 tablespoons distilled white vinegar
2 tablespoons dark soy sauce
2 tablespoons sesame oil
1 teaspoon chile paste
1 clove garlic, minced
1/4 cup cornstarch
1/2 cup water
1 quart vegetable oil for frying
2 tablespoons toasted sesame seeds

Directions

Sift flour, 2 tablespoons cornstarch, baking soda, and baking powder into a bowl. Pour in low-sodium soy sauce, sherry, 2 tablespoons water, vegetable oil, and a dash of sesame oil; stir until smooth. Stir in chicken until coated with the batter, then cover, and refrigerate for 20 minutes.

Meanwhile, bring chicken broth, sugar, vinegar, dark soy sauce, sesame oil, chile paste, and garlic to a boil in a saucepan over high heat. Dissolve 1/4 cup cornstarch into 1/2 cup of water, and stir into boiling sauce.

Simmer until the sauce thickens and turns clear, about 2 minutes. Reduce heat to low, and keep sauce warm.

Heat vegetable oil in deep fryer or large saucepan to a temperature of 375 degrees F (190 degrees C).

Drop in the battered chicken pieces, a few at a time, and fry until they turn golden brown and float to the top of the oil, 3 to 4 minutes. Drain on a paper towel lined plate. To serve, place fried chicken pieces onto a serving platter, and pour the hot sauce overtop. Sprinkle with toasted sesame seeds to garnish.

Ok gang, I am gonna get off of here, go take my morning meds, check my plants, and either sew or cook or I might just lay back down. I got maybe an hour sleep total last night, so I could really use a power nap! LOL! Ya’ll take care and I will see you back here tomorrow morning! HUGS!

WREATHS

Good morning everyone. I hope you are doing well this morning. One of my readers asked about my mother yesterday. To answer your questions, she has been injured and not able to use the computer. But don’t worry, she will be back soon! I am super stoked today! Have you subscribed to the $5 Dinners email newsletter yet? You have… did you see who is the Feature topic for April 10th????? ME!!!!!!!! WOOHOO! GO ME! I want to give a HUGE THANK YOU to Erin, the $5 Dinner Mom for posting about me! If you haven’t checked it out yet… shame on you LOL but you’re lucky, cause there is a link on the sidebar to the $5 Dinner website! Run over there once you are done with me and check her out!

Ok, let me ask everyone a question… how do you know when you are old? Could it be that when everyone you used to watch on television as a child or teen passes away? Well that made me feel very old this morning! Just this morning’s announcement on yahoo front page is that Dixie Carter AND Meinhardt Raabe, who played the Munchkin coroner in "The Wizard of Oz" have both died. Carter was famous for playing Julia Sugarbaker on Designing Women. Then not too long ago, Corey Haim passed, and tons of others in the last year or so… Michael Jackson, Patrick Swayze, Ricardo Montalblan, Clint Ritchie, Bea Arthur, Dom DeLuise, David Carradine, Ed McMahon, Farrah Fawcett, and SO many countless others have all departed. These were people I watched growing up… so how should that make me feel? Well I am sad for each family’s loss but it makes me appreciate life more. Time is precious and you never know when you won’t have it anymore, so use it wisely. Be good to others, helpful, and compassionate. Cherish that quality time with your children, family, and friends. Do things you normally wouldn’t do, and live with no regrets! I want to see each one of you lead a healthy and happy life!

Alright, lets get to a lighter topic now, before I get depressed. Ok so with this project of redecorating my kitchen and fixing to be helping my mom with HER new post-storm decorating, I have been thinking about home decorations a lot and what would be versatile for all events and seasons. And it hit me… wreaths! You see them all the time. You have traditional and modern! Check some of these out.

Craft Idea of the Day: Decorative Wreaths

Here you see a traditional Christmas wreath made of pine branches, pinecones, and the ever-famous red bow. Nothing spells “Norman Rockwell” like a traditional pine wreath.

Now, how about a little more modern Christmas Wreath? You can make wreaths out of scraps of material tied around a wreath form and when you get it nice and full, it becomes a beautiful handmade decoration people will talk about constantly!

Christmas Ornaments can be used for more than just Christmas in many ways. Try gluing color coordinated ornaments to a grapevine wreath for a cute holiday decoration like no other! This one happens to be festive for Mardi Gras!

Feather Boas make interesting wreaths as well. Simply secure one end of a boa to a wreath form and wrap it around tightly covering the entire wreath. Secure the second end to the back of the wreath. You can add beads, ornaments, or even foam cutouts. Nothing says Happy Halloween like a bright orange boa wreath greeting you when you walk up LOL!

Got a favorite teacher? Check out this crayon wreath I made for my DS14’s teacher a few years ago. Take 2 different sized embroidery hoops and a 64 count box of crayons. Hot glue them to the hoops and adorn with little school related wooden cutouts and trinkets for a unique way to thank that special teacher for all she does! This is ideal for elementary or daycare teachers and special needs teachers as well. The letters you see to spell out the name look like wooden blocks, but are actually flat wooden pieces. I found them in a bag at Michael's Arts & Crafts store.

How about all those 100’s of plastic eggs your kids have thrown all over the house? Glue them into an Easter wreath. Bright and cheery and definitely a conversation starter. Add a bow and hang it up. It’s a wonderful way to greet your holiday guests! I used about 6-8 dozen of various sized bright colored plastic eggs. Simply hot glue them around a grapevine wreath, starting with the larger eggs first. You will fill it in with the other eggs as you go around adding to your wreath. Finish with a bow, if you like, and its ready to be hung and enjoyed!

Are you sentimental at heart? Perhaps you have been saving all those countless cards your husband has given you over the years for Valentine’s Day. Cut out the cute graphics and glue them onto a wreath! You will be able to cherish the memories forever!

Someone expecting? Make them a neat diaper wreath to either use for decoration or utilize the stuff! It makes a great gift and the expecting mommy will be very appreciative to have something so creative, yet so useful!

As you can see, you can go on and on forever talking about all the different things you can use to make the cutest wreaths to dress up your door all year long. I think they are great crafts and great decorations! Just google homemade wreaths and you will find countless ideas.

Now I want to talk food! I picked out this recipe to make a few days ago in my crock pots while I was gone. Then today this recipe was the daily pick on a popular website AND on a cooking show I was watching with my mother yesterday called “Daisy Cooks”. So I set up the crock and let it slow cook on low all day and when I got home it was OMG heaven! I should have made ANOTHER crock pot full, cause everyone was diggin’ it and asking for 2nds and 3rds!

Cuban Ropa Vieja

Ingredients

1 tablespoon vegetable oil
2 pounds beef flank, chuck, or skirt steak
1 cup beef broth
1 (8 ounce) can tomato sauce
1 small onion, sliced
1 green bell pepper, seeded and sliced into strips
2 cloves garlic, chopped
1 (6 ounce) can tomato paste
1 teaspoon ground cumin
1 teaspoon chopped fresh cilantro
1 tablespoon olive oil
1 tablespoon white vinegar

Directions

Heat vegetable oil in a large skillet over medium-high heat. Brown the steak on each side, about 4 minutes per side.

Transfer beef to a slow cooker. Pour in the beef broth and tomato sauce, then add the onion, bell pepper, garlic, tomato paste, cumin, cilantro, olive oil and vinegar. Stir until well blended. Cover, and cook on High for 4 hours, or on Low for up to 10 hours. When ready to serve, shred meat and serve with tortillas or rice.

As a bonus today, I am giving you a recipe for one of my mother’s favorite cakes… I baked it for her last night and am taking it to her today to enjoy (HOPEFULLY in moderation LMAO… yea right!). Doesn’t this just look absolutely full of fruity deliciousness! Well it is, and it makes your house smell wonderful too! Just the smell to fall asleep to and bring wonderful dreams of dancing pineapples… hey it’s not Christmas so it’s a good substitute for visions of sugar plums LOL!

Pineapple Upside Down Cake

Ingredients

1 (10 ounce) jar maraschino cherries, drained
1/4 cup butter
1/2 cup packed brown sugar
1/2 cup flaked coconut, optional
1 (8 ounce) can sliced pineapple, drained with juice reserved
1 (8 ounce) can crushed pineapple, drained with juice reserved
1 (18.25 ounce) package golden butter or pineapple cake mix

Directions

Preheat oven to 350 degrees F (175 degrees C). Coat the bottoms and sides of each 9 inch round cake pan with 2 tablespoons of melted butter. Sprinkle the bottom of each pan with 1/4 cup of brown sugar.

In one of the pans, sprinkle coconut over the brown sugar. Lay pineapple rings in a single layer on top of coconut. Place a cherry in the center of each ring. In the other pan, spread the drained crushed pineapple.

Mix the cake as directed on package, but substitute reserved pineapple juice in place of water. Divide batter between the 2 pans. Remember which pan has the pineapple rings in it.

Bake for 40 to 50 minutes in the preheated oven, or until a toothpick inserted into cake comes out clean. Cool in pans for 20 minutes.

While the bottoms of the cake pans are still warm to the touch, invert the layer with the crushed pineapple out onto a serving dish, then gently invert the layer with the pineapple rings on top of it for a dazzling two layer pineapple upside down cake.

Well kids, I hope you have enjoyed today’s entry. As for me, I’m gonna go set my seedlings out in the sun and then start my day! Please join me tomorrow for more great adventures in blogging land. May you be safe and happy in today’s adventures! HUGS!
