WREATHS

Good morning everyone. I hope you are doing well this morning. One of my readers asked about my mother yesterday. To answer your questions, she has been injured and not able to use the computer. But don’t worry, she will be back soon! I am super stoked today! Have you subscribed to the $5 Dinners email newsletter yet? You have… did you see who is the Feature topic for April 10th????? ME!!!!!!!! WOOHOO! GO ME! I want to give a HUGE THANK YOU to Erin, the $5 Dinner Mom for posting about me! If you haven’t checked it out yet… shame on you LOL but you’re lucky, cause there is a link on the sidebar to the $5 Dinner website! Run over there once you are done with me and check her out!

Ok, let me ask everyone a question… how do you know when you are old? Could it be that when everyone you used to watch on television as a child or teen passes away? Well that made me feel very old this morning! Just this morning’s announcement on yahoo front page is that Dixie Carter AND Meinhardt Raabe, who played the Munchkin coroner in "The Wizard of Oz" have both died. Carter was famous for playing Julia Sugarbaker on Designing Women. Then not too long ago, Corey Haim passed, and tons of others in the last year or so… Michael Jackson, Patrick Swayze, Ricardo Montalblan, Clint Ritchie, Bea Arthur, Dom DeLuise, David Carradine, Ed McMahon, Farrah Fawcett, and SO many countless others have all departed. These were people I watched growing up… so how should that make me feel? Well I am sad for each family’s loss but it makes me appreciate life more. Time is precious and you never know when you won’t have it anymore, so use it wisely. Be good to others, helpful, and compassionate. Cherish that quality time with your children, family, and friends. Do things you normally wouldn’t do, and live with no regrets! I want to see each one of you lead a healthy and happy life!

Alright, lets get to a lighter topic now, before I get depressed. Ok so with this project of redecorating my kitchen and fixing to be helping my mom with HER new post-storm decorating, I have been thinking about home decorations a lot and what would be versatile for all events and seasons. And it hit me… wreaths! You see them all the time. You have traditional and modern! Check some of these out.

Craft Idea of the Day: Decorative Wreaths

Here you see a traditional Christmas wreath made of pine branches, pinecones, and the ever-famous red bow. Nothing spells “Norman Rockwell” like a traditional pine wreath.

Now, how about a little more modern Christmas Wreath? You can make wreaths out of scraps of material tied around a wreath form and when you get it nice and full, it becomes a beautiful handmade decoration people will talk about constantly!

Christmas Ornaments can be used for more than just Christmas in many ways. Try gluing color coordinated ornaments to a grapevine wreath for a cute holiday decoration like no other! This one happens to be festive for Mardi Gras!

Feather Boas make interesting wreaths as well. Simply secure one end of a boa to a wreath form and wrap it around tightly covering the entire wreath. Secure the second end to the back of the wreath. You can add beads, ornaments, or even foam cutouts. Nothing says Happy Halloween like a bright orange boa wreath greeting you when you walk up LOL!

Got a favorite teacher? Check out this crayon wreath I made for my DS14’s teacher a few years ago. Take 2 different sized embroidery hoops and a 64 count box of crayons. Hot glue them to the hoops and adorn with little school related wooden cutouts and trinkets for a unique way to thank that special teacher for all she does! This is ideal for elementary or daycare teachers and special needs teachers as well. The letters you see to spell out the name look like wooden blocks, but are actually flat wooden pieces. I found them in a bag at Michael's Arts & Crafts store.

How about all those 100’s of plastic eggs your kids have thrown all over the house? Glue them into an Easter wreath. Bright and cheery and definitely a conversation starter. Add a bow and hang it up. It’s a wonderful way to greet your holiday guests! I used about 6-8 dozen of various sized bright colored plastic eggs. Simply hot glue them around a grapevine wreath, starting with the larger eggs first. You will fill it in with the other eggs as you go around adding to your wreath. Finish with a bow, if you like, and its ready to be hung and enjoyed!

Are you sentimental at heart? Perhaps you have been saving all those countless cards your husband has given you over the years for Valentine’s Day. Cut out the cute graphics and glue them onto a wreath! You will be able to cherish the memories forever!

Someone expecting? Make them a neat diaper wreath to either use for decoration or utilize the stuff! It makes a great gift and the expecting mommy will be very appreciative to have something so creative, yet so useful!

As you can see, you can go on and on forever talking about all the different things you can use to make the cutest wreaths to dress up your door all year long. I think they are great crafts and great decorations! Just google homemade wreaths and you will find countless ideas.

Now I want to talk food! I picked out this recipe to make a few days ago in my crock pots while I was gone. Then today this recipe was the daily pick on a popular website AND on a cooking show I was watching with my mother yesterday called “Daisy Cooks”. So I set up the crock and let it slow cook on low all day and when I got home it was OMG heaven! I should have made ANOTHER crock pot full, cause everyone was diggin’ it and asking for 2nds and 3rds!

Cuban Ropa Vieja

Ingredients

1 tablespoon vegetable oil
2 pounds beef flank, chuck, or skirt steak
1 cup beef broth
1 (8 ounce) can tomato sauce
1 small onion, sliced
1 green bell pepper, seeded and sliced into strips
2 cloves garlic, chopped
1 (6 ounce) can tomato paste
1 teaspoon ground cumin
1 teaspoon chopped fresh cilantro
1 tablespoon olive oil
1 tablespoon white vinegar

Directions

Heat vegetable oil in a large skillet over medium-high heat. Brown the steak on each side, about 4 minutes per side.

Transfer beef to a slow cooker. Pour in the beef broth and tomato sauce, then add the onion, bell pepper, garlic, tomato paste, cumin, cilantro, olive oil and vinegar. Stir until well blended. Cover, and cook on High for 4 hours, or on Low for up to 10 hours. When ready to serve, shred meat and serve with tortillas or rice.

As a bonus today, I am giving you a recipe for one of my mother’s favorite cakes… I baked it for her last night and am taking it to her today to enjoy (HOPEFULLY in moderation LMAO… yea right!). Doesn’t this just look absolutely full of fruity deliciousness! Well it is, and it makes your house smell wonderful too! Just the smell to fall asleep to and bring wonderful dreams of dancing pineapples… hey it’s not Christmas so it’s a good substitute for visions of sugar plums LOL!

Pineapple Upside Down Cake

Ingredients

1 (10 ounce) jar maraschino cherries, drained
1/4 cup butter
1/2 cup packed brown sugar
1/2 cup flaked coconut, optional
1 (8 ounce) can sliced pineapple, drained with juice reserved
1 (8 ounce) can crushed pineapple, drained with juice reserved
1 (18.25 ounce) package golden butter or pineapple cake mix

Directions

Preheat oven to 350 degrees F (175 degrees C). Coat the bottoms and sides of each 9 inch round cake pan with 2 tablespoons of melted butter. Sprinkle the bottom of each pan with 1/4 cup of brown sugar.

In one of the pans, sprinkle coconut over the brown sugar. Lay pineapple rings in a single layer on top of coconut. Place a cherry in the center of each ring. In the other pan, spread the drained crushed pineapple.

Mix the cake as directed on package, but substitute reserved pineapple juice in place of water. Divide batter between the 2 pans. Remember which pan has the pineapple rings in it.

Bake for 40 to 50 minutes in the preheated oven, or until a toothpick inserted into cake comes out clean. Cool in pans for 20 minutes.

While the bottoms of the cake pans are still warm to the touch, invert the layer with the crushed pineapple out onto a serving dish, then gently invert the layer with the pineapple rings on top of it for a dazzling two layer pineapple upside down cake.

Well kids, I hope you have enjoyed today’s entry. As for me, I’m gonna go set my seedlings out in the sun and then start my day! Please join me tomorrow for more great adventures in blogging land. May you be safe and happy in today’s adventures! HUGS!

QUALITY TIME

Good morning everybody! How are you doing this bright Saturday morning? I’m good… in a lot of pain but good on the inside, so life is good! The gang wants to go to a local nursery called Maa’s, but I’m not quite sure if I can handle it today. Playing in my little garden is one thing… walking what’s gotta be at LEAST a 1 acre or more nursery grounds is totally different. I do need to take these clothes and donate them so I can get them out of my living room! Then of course, I could get the guys to pull more stuff out of storage too… I just don’t know what I want to do today LOL!

Well, I got more plants for my ever growing garden yesterday! I got 2 more Husky Cherry tomatoes, 2 Porters Dark Cherry tomatoes, 4 Mucho Nacho Jalapeno peppers, and 9 Brussels Sprouts. I also picked up 3 more bags of potting soil. After school my DD15 wanted to help in my garden. She and I were outside and I was teaching her how to plant the veggies and how to feed and water them. She was learning where her food comes from and how much hard work it can be. But most importantly, we were sharing quality time together. We also planted some more seeds… pumpkin, zucchini, cantaloupe, and okra. Hopefully in about 2 weeks we will see these seeds start to pop. She told me she would be so proud if her seeds actually grew. We had fun. I love spending quality time with my kids. And now I am super excited about the sprouts of Peas I have in the starter cups! I can’t wait to plant them! I got the Gardening fever! And if I can bring a little bit of Spring to my readers who cannot yet indulge and enjoy, then so be it. I will be your “Susie Springtime” LOL!

Alright kids, Easter is less than a month away, so its time to start thinking Easter crafts! Whether you decorate your house just for your family, or you host a big ol’ shingdig… we’ll cover it! If ya need ideas, leave me a comment and I’ll make sure I take care of ya! OK… I wanna start with one of the first things I think about for “decorating”… Centerpieces. You can put them on any table… dining room, coffee tables, end tables, you name it! Traditionally you are gonna find that most of your colors of spring are yellows, oranges, and pastels. Bright and cheery is your goal. Daffodils, tulips, lillies, and daisies are prevalent this time of year… especially in Easter décor. And Easter is a very religious event for many as well. I, personally, do not decorate in a religious theme as to not offend anyone. I have friends of many different faiths, and I want them to be as comfortable as possible when they come to visit.

Craft Idea of the Day: Centerpieces with food

Food can be a unique aid in decorating, but to prevent spoiling, is usually a last minute thing. You can make a beautiful centerpiece with nothing more than a glass container, fresh flowers, food and water. Make sure that the color of the food compliments the flowers and goes along with your theme.

I find fruits such as limes, lemons, oranges, apples, etc. are very good to use, and then you have jelly bean and Jordan almonds are popular candies to use. Its whatever your heart desires to make! I don’t recommend making skinned fruits (limes, lemons, etc.) more than MAYBE 3 days in advance at most. Hard candies, I say maybe one week…

You can also use those brightly colored plastic Easter eggs you find in the store. I recommend the smaller ones- but if you are making a larger vase, then the regulars will work well too. Since they are plastic, this is a centerpiece you can prepare farther in advance… just make sure you take care of your fresh flowers. There again, you could use silk and it would not need to be watered. You see how the possibilities are kinda endless here? LOL! Whatever you choose to make, I’m sure it will be a wonderful piece to your decor!

Ok, For dinner last night, we had a recipe in one of Erin Chase’s $5 Dinner newsletters. It utilizes Brussels Sprouts, which we just planted today LOL. So I would like to share the recipe with you as my gang ate it up last night… so once again Thanks Erin for another great recipe!

Pan Roasted Brussels Sprouts with Chicken & Pasta

Ingredients

3/4 lb. Brussels sprouts
1 Tbsp olive oil
1 tsp lemon juice
Salt and pepper
2 chicken breasts (about 1 lb.)
2 cups shell pasta
1/4 cup lemon juice
Salt and pepper, to taste

Directions

1. Rinse Brussels sprouts and remove any yellow leaves.
2. Chop off the ends and discard.
3. Cut lengthwise into quarters.
4. Add to a small skillet with some olive oil and lemon juice.
5. Sprinkle with salt and pepper. Toss.
6. Roast the sprouts in the pan for 4-6 minutes, or until turn golden brown. Set aside.
7. In the same skillet, cook the diced chicken pieces. Toss for 6-8 minutes, or until all chicken pieces have cooked through. Cooking time may vary depending on thickness of the pieces.
8. Meanwhile, cook 2 cups of pasta as directed on package instructions.
9. Once pasta and chicken have cooked, add all to a large bowl and toss with 1/4 cup of lemon juice. Sprinkle with salt and pepper, to taste.
10. Serve by itself, or with a side salad.

Ok everyone… its that time again. I am gonna sign off and get everyone up and moving and see what it is we plan on doing today! May become a busy day, may be rather relaxed… I just don’t know. Either way I wish you all the best in whatever you set out to do! HUGS!

CHAOS & CRAZINESS

Good morning to you my lovely lads and lasses! How are you this blissfully beautiful day? I am doing alright… a touch of fatigue and a lot of pain makes for an interesting morning! BUT… two of the kids are off to school YAY…which puts me in a good mood! My baby is very sick so he is home and I am keeping a close watch on him. He was up most of Saturday night since about 1am, so I was up with him all night. Then I cooked!

Ok, so yesterday I continued part 2 of the Weekend Cooking marathon! Check out this large amount of craziness!

I started the day by making pink pancakes for breakfast, but Alex wanted no part of those so I made him some normal buttermilk pancakes. I mixed up extra batter and made extras to freeze for him before school days so he would have a warm breakfast too! LOL I have requests now to make different color pancakes for each holiday LOL! They want purple this week too for Mardi Gras… Green for St. Patty’s Day, R/W/Blue for 4th of July, etc. They are CRAZY! I’m sorry but I’m not sure if I could do GREEN pancakes LMAO!

I got 4 packs of 3 small pancakes and 1 pack of 4 larger ones. Boom- in the freezer! Hey if Eggo can do it, so can I, right? LMAO

Then, I dug through the lovely deep freezer in the kitchen and found more cutlets YAY! So I made more CFS soup! YUMMMYYYYY! My DD and I had 2 BIG bowls for lunch and made ourselves sick… and VERY sleepy LMAO! I also made MORE Mulligatawny Soup that everyone was raving over… and pulled out more foods to make more TV dinners; sausage, ribs, etc.

I made Pricky Pear Cactus ribs for dinner. They didn’t last long enough to take a picture of them completed! So here they are marinating.

I also made mesquite BBQ ribs. I paired them all with roasted baby reds and garlic mashed potatoes and roasted baby carrots with a molasses and brown sugar glaze.

And, of course, I made the buffalo steaks for my hubby for his V-day dinner. He got the carrots and potatoes too!

I had to come to a brief stop cause the DS14 started running a fever and coughing and stuff, so I had to be nurse mommy. I get real nervous when he gets sick because of his medical history with the meningitis and autism and such. I gave him an Ibuprofen and some cough syrup and put a cool rag on his head until his fever broke. Then I maintained a vigil all night on him. So that makes the 2nd night without sleep, but its ok, cause I couldn’t sleep even if I tried! I worry too much.

For those of you who don’t know, he had a cold and ear infection when he was 10 months old. The pneumonia germ got into his spinal fluid through the ear infection and he got VERY ill. I took him to the ER and he was diagnosed with Spinal Meningits. He had a serious seizure and during that he had 2 strokes. It resulted in brain damage and they suspect the scar tissue on the brain is the reason behind his autism. But it is too deeply in his brain to even try to operate. Ever since then I am a nervous wreck when he gets sick… especially in the fall and winter months because that’s when it happened! I know its silly, after 13 years to be so scared, but it was a major stresser and I blamed myself for years… that maybe had I just caught it earlier, etc. So yea, I go overprotective overboard LOL! And we have become self-educated about Autism and big activists as well.

My legs are really paying for 2 days of cooking, so I don’t think my body minded that I had to stop cooking. Today is going to be sit-on-my-butt-and-take-a-break-day! I’m gonna declutter my desk and sort through a couple of boxes. I’m gonna sit at the table and work on finishing the started scrapbook pages for my DD and then maybe start some more. So like I said… its sit-on-my-butt day LOL! Of course I will be taking care of the DS too, so I won’t totally be on my hind end LOL! So there isn’t too much to share as far as crafts, etc. I (if my legs can handle it) need to finish up with my cooking cause I still have a few things left to use up for this round. But I do have a very interesting recipe I would like to share with you today… its for a side dish and it’s from The $5 Dinner Mom’s email… it’s a great recipe and I think you will enjoy it… especially if you like Rosemary (like she does and I do as well!)

Roasted Red Potato Salad
(Courtesy of Erin Chase & $5 Dinners.Com)

Ingredients

13 small red potatoes, diced
3 sprigs of rosemary
Salt and pepper
Drizzles of olive oil
1/2 cup mayonnaise
1/2 cup milk
1-2 Tbsp Dijon mustard

Directions

1. Dice the red potatoes.

2. Using your fingers, pull off the rosemary leaves by sliding and pinching your fingers down the sprig. Chop the rosemary leaves.

3. Add the diced potatoes to a baking dish. Sprinkle with salt and pepper and some of the chopped rosemary. (You’ll need more rosemary for the sauce.) Drizzle some olive oil over the top. Toss in the baking dish.

4. Roast the potatoes at 400 for 25-35 minutes, or until softened.

5. In a small bowl, add the mayonnaise, milk, Dijon mustard, salt and pepper.

6. Whisk and then add the remaining chopped rosemary leaves. Mix in the rosemary.

7. Pour the sauce over the roasted potatoes.

8. Toss the sauce with the potatoes.

9. Serve Roasted Red Potato Salad warm…or chill for at least 2 hours and serve cold.

If you haven’t checked out $5 Dinners, I highly recommend it! Erin Chase has lots of great recipes, articles, etc. I get the email newsletter and she does a great job! She just put out a recipe book that I hope to get soon. I wish I could get it today as she is doing a book signing in Houston tonight at the Downtown Library from 6-8pm! I would love to meet her! As for me, well I think I’m gonna get off here and check on the boy. If all goes well, then I’ll hopefully get him to eat a little something and then we can watch some cartoons and do some scrapbooking! You take care and stay warm today! Until tomorrow… HUGS!
