ENERGIZED

Good morning children. How are you doing this day of days. I am dragging but what else is new LOL! Mom’s got a doctor appointment today, so I am going to go over and straighten and work at her house while the DH works on ours.

I am sad to report that I didn’t continue cooking yesterday after the kids went to school. Having taken my meds, I laid on the couch and took a nap. I guess my body needed the extra sleep. By the time I woke up, it was time to go get the kids and then I headed out to my mom’s house. I’m heading out there today too to work all day, so I won’t be cooking and crafting until maybe after I get home.

My DD went and told my other “band kids” that I hurt myself real bad, so now I have them rallied to help me around the house and such as well. They all came out to the car yesterday when I was picking my DD and DS18 and were “checking” on me LOL! They are some good kids, let me tell ya… I’ve trained them well LMAO!! They have the Spring concert coming up, so I am seeing some jam sessions coming soon. Good thing I am doing mass cooking right? Tons of hungry teenagers in the house is always a dangerous thing LOL!

OK now with me on the go constantly, I have been looking for ways to both lose weight and have enough energy to make it through everything that is going on lately. So, I have been researching and I found this article on yahoo… tell me what you think.

Breakfast Burrito
Cook 1 Amy's Breakfast Burrito as directed on package. Top with 2 tablespoons plain nonfat yogurt. Serve with 1 orange.

Bacon, Egg and Cheese Sandwich
Order 1 Starbucks Reduced-Fat Turkey Bacon and Egg Whites English Muffin sandwich.

Cream Cheese, Fig and Nut Wrap
Roll up a whole-wheat wrap with 2 tbsp light cream cheese, 4 dried fig halves and 2 tbsp chopped walnuts.

Cherry-Vanilla-Almond Smoothie
Blend together 1 cup frozen cherries, half a medium banana, 1 cup skim milk, 1/2 cup plain nonfat yogurt and 1 tbsp sliced almonds. Add a few ice cubes to make it more frothy.

Strawberry Almond Oatmeal
Prepare 1 packet instant plain oatmeal with 1/2 cup skim milk instead of water. Top with 3/4 cup frozen strawberries, thawed; 2 tbsp sliced almonds and 1 teaspoon brown sugar.

Apricot, Almond and Ricotta Toast
Spread 2 slices whole-wheat toast each with 2 tbsp part-skim ricotta and 1 tsp apricot preserves; top each slice with 1 1/2 tsp sliced almonds.

5-Minute Egg and Smoked Salmon Sandwich
Crack 1 egg into a microwave-safe bowl. Cover with a paper towel and microwave until egg is cooked through and not runny. Layer 1 wedge The Laughing Cow Light cheese, egg, 2 oz smoked salmon and 1/4 cup raw baby spinach on a Whole Wheat Arnold Sandwich Thin. Serve with 1large apple.

LEISURELY WEEKEND BREAKFASTS (about 350 calories each)

Portobello and Pesto Egg Scramble
In a medium sauté pan, cook 1 sliced portobello mushroom cap with 1/4 cup chopped red onion in 1 tsp olive oil until soft, about 5 minutes. Whisk 4 egg whites with 1 tbsp water and add to pan. Scramble mixture over medium heat until eggs are no longer runny; add salt and pepper to taste. Just before removing from heat, fold in 1/4 cup shredded part-skim mozzarella and 1 tsp prepared pesto. Serve with 1 slice whole-wheat toast.

Peanut Butter Waffle-wich
Top one toasted whole-grain waffle with 2 tsp peanut butter, 2⁄3 cup sliced apples and a sprinkle of cinnamon. Top with another whole-grain waffle. Serve with a café au lait made with 4 ounces coffee mixed with 4 oz steamed skim milk.

Spinach and Smoked Gouda Egg Sandwich
Sauté 1 cup fresh spinach with olive oil cooking spray until wilted (add pepper and garlic powder if desired); set spinach aside. In same pan, fry 1 egg plus 1 egg white in cooking spray until no longer runny. Top eggs with 2 tbsp shredded smoked Gouda. Sandwich eggs, cheese and spinach between 2 sides of a toasted whole-wheat English muffin. Serve with 1 orange.

Some of those don’t sound too appealing to me, but hey… at this point I’m willing to give it a shot! Now let’s talk crafts! We have 2 more days until Earth Day, and I hope you have been enjoying the recycled craft ideas. I have another one for you today that I just thought was super cute (and just happen to fit with my recipe discussion too… LOL Go figure!).



Craft Idea of the Day: Chopstick Wrapper Bookmark

Materials:

2 Pretty Chopstick wrappers
1 Piece of Card stock or Oaktag Paper
A Pencil
Scissors
A Glue stick
Clear Packing Tape
Standard Hole Punch
Grommet & Grommet Installation Tool
A tassel

Directions:

These are very easy to make and are fabulous for small last minute gifts, housewarming trinkets and even stocking stuffers during the holidays! Ready to get started?

Take one of the chopstick wrappers and trace it with a pencil on your piece of oaktag or cardstock paper.
Cut out the cardstock that you've just traced and use the glue stick to glue both chopstick wrappers to it, one wrapper on each side of the paper.

Set it aside and allow it to dry for about an hour. Use clear packing tape to laminate each side of the bookmark. Do one side at a time and then use the scissors to trim away any excess plastic.

Use a hole puncher to punch a hole at the top of the bookmark where you would like to place the grommet.
Lastly attach the grommet with the grommet tool and then string the tassel through the center and tie it on.

Cut off any excess string.

Tips & hints: There are lovely grommets in all kinds of colors and styles in the scrapbooking aisles at your local craft store, so experiment with different looks that strike your fancy!

Ok, its time to munch! WOOHOO! Ok, I’ve already confessed I have this Asian thing ya know… well today’s dish I have seen my mother eat at Szechaun a lot so I searched for a at-home DIY and I finally found one. Of course, to please mother’s palate, there will be a few changes, but the concept is the same. Check this out!



Moo Goo Gai Pan

Ingredients

1 tablespoon vegetable oil
1/4 pound sliced fresh mushrooms
1/4 pound snow peas
1 (8 ounce) can sliced water chestnuts, drained
1/4 pound sliced bok choy
salt and black pepper to taste
1 tablespoon vegetable oil
1 teaspoon minced garlic
1 teaspoon minced fresh ginger root
3/4 cup skinless, boneless chicken breast meat - thinly sliced
1 teaspoon white wine
1/4 teaspoon white sugar
1/4 cup chicken broth
1 tablespoon cornstarch
2 tablespoons water

Directions

Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Stir in the mushrooms, snow peas, water chestnuts, and bok choy; season to taste with salt and pepper. Cook and stir until the vegetables are just tender, about 5 minutes. Remove the vegetables from the wok and wipe the wok clean.

Heat the remaining 1 tablespoon of vegetable oil in the wok. Stir in the garlic and ginger; cook a few seconds until the garlic begins to turn golden brown. Stir in the chicken and cook until the chicken is no longer pink, about 5 minutes. Add the wine, sugar, and chicken broth; bring to a boil. Dissolve the cornstarch in the water and stir into the simmering sauce. Once the sauce returns to a simmer, stir until thick and clear, about 30 seconds. Return the vegetables to the wok and toss until hot and coated with the sauce.

HOME CRAFTING

Howdy do on this chilly Thursday morning? I am quite sore and confused actually. I’m wondering where is this rain we were supposed to get? I just got the cold part! But other than that LOL, I am pretty good. I hope this finds you well in whatever land you hail from… I know I have a Canadian, East Coast, and Ohio reps present… but the other ones of you lurk and don’t send a shout out, how am I supposed to know where you are representing? So where are ya from!? Come on in… sit… chat with us. I love to talk to my readers! But if not, if ya just come here to read, that's ok too!

Ok, so I didn’t get any sewing done yesterday sadly, BUT I did manage to get some organizing done. Working on the house is just as good as crafting… lets say I was crafting on my house! LOL! See I had this big Rubbermaid tub full of Christmas ribbon in storage that now needed a new home. So it’s just kind of been sitting here in the living room getting under foot. Well I have tons of other ribbons too I use in my crafting (making bows, etc.), and since Dad put up a screen door for me, a spare piece of pegboard. I also have some wooden dowels and some rods for the board…. Hmmm… I got it!



TADA!!! Presenting my Ribbon Rack! I hung a lot of my “everyday” ribbons on the dowels and hung the dowels on the pegboard! Pretty snazzy huh? That allowed me to put all the Christmas ribbons in the 2 drawers I almost emptied. PLUS its organized for easy access (just spin and clip) AND I can see what I have and what I might need! I think it looks kind of professional! I saw one similar to this in a store once. LOL! I was quite proud. And before you ask, yes this is only PART of what I have! I have 2 more drawers full, and a box or 2 still full too LOL!

So then I was perusing the web yesterday and I found an interesting article under my local news. It was called “33 Things to Do in Houston for $2 or Less” featured by our local Channel 11 News. I was thoroughly happy to see this article for multiple reasons! First being it’s a positive article for a change! I don’t look at the news much because its always littered with hate, murder, and just plain ugliness and sadness. Then the fact that this is an article of FRUGALITY! YAY! Cheap entertainment… and considering I am fixing to start mapping out our summer excursions… it was like finding gold! And lastly is more of a hope. I hope this article inspires people to get out with their families and enjoy some quality time! Stop being so cooped up behind those stupid video games and TV shows and get outside and enjoy life, ya know? Its too short… use it wisely! I know I TRY to do at least 1 special thing with my kids each summer, even if it doesn’t cost a lot. Last summer we got to go to the Blue Bell Ice Cream Creamery (YUM!!!!) and the Jersey Barnyard. We all had a GREAT time and it made memories for my kids that they can have forever. Hopefully they will do the same with their kids, ya know? We would have done more, but I got injured and it put me down for the whole summer, which sucked! But I can walk again (somewhat LOL) and I plan to have a better year this year! I am planning for the zoo, maybe the museum, the Mrs. Bairds Factory, the Dr. Pepper Factory, and a few other things… SHHH! Can’t tell ya yet… you’ll leak it to the kids! LOL! I don’t like to tell them and get their hopes up and then something happens where they get disappointed. Not cool… so I just surprise them! But in secret, I already have it all planned out LOL cause that’s how I operate best! Anyways, if you are in the Houston Area or might be visiting the Houston area, I typed up the list for you to see… admission is free unless I made a note! I’m sure you can Google each one to learn more… many have their own websites. Shoot, I know at least 1 of these is on my Bucket List (which I plan to be conquering some of them this summer LOL!).

Ok sticking with the “Home crafts”, I painted the door and jam that my Dad installed with a couple of coats of primer. I have to do the trim on the next dry and sunny day so it will match the house. After dinner was completed I painted more of the squares on the cabinets in the kitchen. I also started on the trim of the lower cabinets too. I will get them all done eventually to where the only thing left to do is order then put the wallies on and put up the new curtains, etc!

Ok, so what kinds of crafts are in store for today? More sewing I think because I have special “secret agent” plans for Friday LOL! Plus taking a day or sew (LOL) break I think will keep me from getting burnt out on sewing and losing my Mojo! Can’t have that. Now I am not sure I will be making any of these, but I know they are a very popular item, especially with young mothers.



Craft Idea of the Day: Shopping Cart Cover

Things You'll Need:

1 yard of coordinating fabric
4.5 yards package of 1-inch elastic
2 yards of coordinating bias tape

Make the Inside of the Shopping Cart Cover

Step 1: Measure and cut two identical pieces of fabric with the following dimensions: 1 times the width of a cart's seat and 2 times the depth wide, and 1 times the length and 2 times the depth long.

Step 2: Use fusible interfacing and fuse a layer of batting between the two pieces of fabric.

Step 3: Make a box by cutting squares out of the corners and baste the corners together to make a box shape. Use bias tape to finish the edges.

Step 4: Cut two holes for legs In the front of the "box" about 6 inches in diameter. Baste around each opening and sew bias tape around the leg holes. Baste the top edges of the "box" together then measure the total length around the top.

Make the Skirting of the Shopping Cart Cover

Step 1: Take two pieces of fabric and cut them 1.5 times longer than the distance you measured around the top of your "box" and 1.5 feet wide.

Step 2: Sew the two pieces, wrong sides together, along one long side. Press the seam and flip to right sides together.

Step 3: Stitch 1.5 inches from the original seam leaving a 2-inch space to feed the 1-inch wide elastic. Feed the elastic through the pocket you made using a safety pin as your guide. Attach the two ends of elastic together by sewing an "X" into both ends.

Step 4: Baste around the raw edges of your skirting and gather. Make sure you end up with a length equal to the length you measured around the top of the "box."

Step 5: Pin and sew the gathered fabric to the wrong side of the top of the inside of the "box." Trim and finish the edge with bias tape.

Okie dokie… I had a couple of emails asking me to share how I cooked the roasted veggies cause they looked "absolutely heavenly” LOL! Alrighty, here ya go gang… but remember, this will work with all kinds of veggies, not just the ones I used, so feel free to substitute or even add to the list!



Roasted Vegetable Medley

Ingredients

olive oil
1 large yam, peeled and cut into 1 inch pieces
1 large potato, peeled and cut into 1 inch pieces
1 cup baby carrots
2 zucchini, cut into 1 inch slices
2 yellow crookneck squash, cut into 1 inch pieces
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 large onion, cut into medium-large pieces
4-6 cloves garlic, minced, divided
1/4 cup chopped fresh parsley
1/2 teaspoon salt, divided
1/2 teaspoon ground black pepper, divided
1/2 teaspoon Italian seasoning, divided

Directions

Preheat oven to 400 degrees F.

Place the yams, potatoes, and carrots into a bowl. Drizzle with olive oil, salt, pepper, garlic, and Italian seasoning and toss to coat thoroughly. Spread onto the baking sheet. Bake in the preheated oven for 30 minutes.

While that pan roasts, in the same bowl, place zucchini, onion, squash, bell peppers, and garlic and drizzle with olive oil, salt, pepper, and Italian seasoning. Place second pan in the oven Continue baking until all of the vegetables are tender, about 20 minutes more.

Once tender, remove from the oven. Toss the roasted summer veggies with the potato mix in a large bowl until combined.



Now you HAVE to have a main dish right? Well I saw this recipe and I had to try it! Now I HAVE to share it with you LOL! Jean’s 88c chicken inspired me to share this one with you LOL! So, if you have a thing for yummy chicken, you might want to try this one on for size! I know that even I could go for another pan of this delish chicken every time I make it LOL! It goes great with peanut noodles too! YUMMY!!!!!!!



Baked Asian-Style Honey Chicken

Ingredients

1 (3 pound) whole chicken, cut into pieces
3 tablespoons chopped onion
2 tablespoons soy sauce
1 tablespoon minced fresh ginger root
1 teaspoon minced garlic
2 tablespoons honey
1/4 cup chopped green onions
sesame seeds to garnish, optional

Directions

To Marinate: Arrange chicken pieces in a 9x3 inch baking dish. In a small bowl combine the onion, soy sauce, ginger, garlic and honey; mix together and spoon mixture over chicken. Cover dish and refrigerate to marinate for 1 hour, turning pieces once.

Preheat oven to 375 degrees F

Bake chicken for 30 minutes. Turn pieces over and top with green onion, then continue baking for about 10 to 15 minutes, or until chicken is tender and cooked through and juices run clear. Sprinkle lightly with sesame seeds to garnish. Serve immediately.

OMGoodness… aren’t you so incredibly hungry now? I know I am drooling! Alrighty, I need to go check my plants to make sure the cold and wind did not break or kill them and then I need to get started on the crafts, so I will let you go for now. AMUSING MYSELF

Well good morning everybody! How are you doing this dark and dreary morning? Its raining here and its down right ugly. Looks like all inside activities for me the rest of the week. If you got the vibe yesterday that I was in a silly mood, well you would be correct! And after I posted my blog yesterday, I was off to read the yahoo odd news and I found this article!

Wife allegedly changes wires on saw to shock hubby

OLYMPIA, Wash. – Court papers allege that an Olympia woman, angry that her husband left her, tampered with his power tools so that he received a powerful electric shock. Carolyn Paulsen-Riat was booked Friday into the Thurston County Jail for investigation of third-degree assault, domestic violence, and second-degree malicious mischief. A judge released the 33-year-old woman on her own recognizance. The Olympian newspaper reported that court documents said that on Jan. 1, the man was using a 220-volt table saw when he received the shock, knocking him to the ground. Thurston County sheriff's deputies said the man did not need to go to a hospital. In the documents, deputies said the woman told them she had reversed the wires on his power tools because she was angry he was leaving.

OMG I could not stop laughing for some reason! I mean I know its wrong to laugh at someone’s misfortune but just the idea itself was so funny! So I read the article to the hubs and I was laughing uncontrollably out loud and he called me wretched LOL! So I joked that I was gonna mess with the wires on his tattoo machines so it would shock him and tattoo his eye or something and started laughing AGAIN! AND she’s 33 just like me! LMAO! I think the hubs is scared! And THAT’S the most funny part! But he should know deep down I wouldn’t do anything like that LOL! But for some reason I found it so incredibly funny… as with a lot of other things yesterday and I have no reason why… it all started with those dang shut up dogs! LMAO! It gave me the incurable giggles!

Craftiness today… well I am still on the purse making kick… gonna throw in a few dish towels too I think. I also am going to make some of these walker totes next week and donate them to the local retirement home on the anniversary of my grandfather’s death. It was rough on me, so each year I make donations to places that have some significance to me... Pops’ death, my son’s death, the anniversary of Alex’s meningitis, and some other causes close to me. Today I’m gonna show you how to make a Walker tote for anyone close to you who needs a mobility aid.



Craft Idea for the Day: Walker Tote (also Stroller tote)

These are very easy to do, work up VERY quickly and are much appreciated by those who receive them. Consider donating to a retirement home or a healthcare agency that specializes in physical therapy and other services to the elderly.

Materials:
· 1 ½ yards sturdy weight cotton or cotton-poly blend fabric (makes 2 totes)
· About 14 inches Velcro for each tote

Instructions:
1) Cut one 16"x 53 1/2" strip of fabric.
2) Fold in half, right sides together, to form rectangle 16" wide and 26 3/4" long. Stitch edges using ½” seam allowance; leave one short end open.
3) Clip corners, turn and press; at open end, press ½ inch to the inside. (it’ll look like an elongated pillowcase).
4) ) Stitch closely along pressed-in edges of open end, closing the “pillowcase”.
5) Mark or pin line 10” from the folded end (this will be your next fold line); mark another line 5” from the end you’ve just stitched closed (this will be your placement line for Velcro).
6) Fold along marked line 10” from end; stitch closely along sides to form pocket (pocket now forms front side).
7) On back side, stitch Velcro strips close to top edge and close to line 5” from end. (This will form a casing that will go around the top bar of a standard-size walker.)
8) If desired, turn the large pocket into two smaller ones by stitching a vertical line through all thicknesses of the pocket. If you stitch a line about 5 inches from the edge, you make pockets that are a good size for a cordless phone or TV remote on one side; a folded newspaper or magazine on the other side.



You could also dress this up by stitching a row of rick-rack or other trimming along the top of the pocket before stitching the tote edges together. You could also use this as a tote for a stroller and simply make it not as wide and hang it over the stroller handle.

OK what’s on the menu for tonight? I feel some Asian persuasion coming on! Plus I have a bunch of produce to use up the next couple of days! So I am going to make a Bok Choy and Chicken Stir fry on a bed of noodles with some homemade egg rolls for dinner. The bok choy stir fry comes out just so pretty! I am also going to be cooking all day today… soups and stuff as well. I have a couple of squash which will become soup, some leftover tofu and such for some more hot & sour, some more clams for chowder, and only god knows what else I dream up while I’m in there LOL. But celery, baby carrots, one more baby bok choy, leeks, potatoes, onions, and a bunch of other things will become something wonderful by the end of the day LMAO! I’ll share my creations tomorrow if they turn out edible LMAO! But today, I’m sharing the Asian dinner with you. It’s healthy, delicious, and fortunately always gone in our house! LOL!



Bok Choy & Chicken Stir Fry

Ingredients
6 slices bacon, chopped
3 med. to large baby bok choy
1 teaspoon olive oil
1 small onion, diced
1 teaspoon red pepper flakes
4 cloves minced garlic
2 cups sliced carrot
1 cup sliced mushroom
1 medium bell pepper, julianned
1 can peas, drained
4 boneless, skinless chicken breasts

MARINADE FOR MEAT:
1/4 cup chicken broth
1/4 cup soy sauce
2 teaspoon rice wine vinegar
2 teaspoon sesame oil
1 teaspoon red pepper flakes
1 teaspoon sugar

Directions
1. Fry bacon in a large wok over medium heat until crispy. Remove bacon with slotted spoon. Add the olive oil, onion, red pepper flakes and garlic. Cook and stir over medium heat until the onions are starting to be tender. Add carrots, mushroom, bell pepper, and peas.

2. Add the bok choy, and place a lid on the pan. Let cook for 3 to 5 minutes. Remove the lid; cook and stir until the bok choy is tender but still crunchy, about 2 minutes. Stir in the bacon, and season with salt. Serve piping hot!

3. In a separate skillet, cook the chicken until no longer pink. Stir into the vegetable mix when done.



OMG so incredibly delish! And you can add more red pepper flakes if you want it spicy hot too! Serve it on a bed of chinese (or spaghetti or whatever you have) noodles and wow! YUMMY! As for the organization race… well I’m still doing it, just at a slow trot right now LOL! I have YEARS of junk to go through, so it’s a little overwhelming, but I’ll get there!
