WELCOME MAY

Well good morning my friends! How are you all doing out there. Me, well I think I have developed a small head cold from the ever-changing weather, but other than that, I’m good. I’m very tired and I’m going to try to have a somewhat leisurely weekend (slower paced) because I think the events of the last couple of weeks have FINALLY really hit me LOL! I got a little “boo-hoo-y” yesterday (as my Dad calls it LOL) and then I crashed! I mean I crashed so hard, I didn’t even eat dinner! Think the last time I looked at the clock it was 6 something? LOL! This old gray mare just ain’t what she usta be LOL! So instead of running myself into the ground, and being no use to anyone, I need to just slow it down to a jog instead of a sprint LMAO!

Ya know, I sit here and say that I am gonna slow down but you and I both know that isn’t gonna happen LMAO! I am going to the hospital this morning, then I will go to the grocery store and JoAnn’s when I am done there (FUNNY story I’ll tell ya in just a sec LOL). Then its come home and start some more mass cooking and Madison has that QuinceaƱera to go to tonight. But now she doesn’t want to go because she had a very BAD day yesterday at school. Someone stole her phone, so she was crying all day yesterday when she got home. So I don’t know if she is going to that tonight. I can’t force her to go, but I did tell her it wouldn’t be fair to Veggie if she didn’t go.

Ok time for my funny story… actually its courtesy of Mom. LOL! So you know how I have been wearing my scrubs up to the hospital to be with mom. Well she says that when she is released, she wants to go to the casino LOL. She said she will get a wheelchair and I can be her personal nurse LMAO! BUT I have a dress code. I must find casino theme or money fabric and make a scrub top out of that LMAO! Is that not funny or what!? She had me rolling talking about it. So that’s why the trip to JoAnn’s today… good thing I have a coupon! LMAO!

OK so its time to make something wonderful. What do you want to do? Well with Mother’s Day being on May 9th, I thought that this Mothers day project is the perfect craft for kids. It uses cupcake wrappers to create beautiful paper flowers.



Craft Idea of the Day: Mother’s Day Cupcake Wrapper Flowers

Materials:

Assorted Colored Cupcake Wrappers in 1 sizes
Craft Glue
Pom Poms
plastic knifes or sticks for stems
Green foam leaves or construction paper

Directions:



Start by taking your cupcake wrappers, and gluing them together as shown below. Start by gluing a small one inside the large one. Push the edges of the wrapper out to open the flower.



Glue the leaves and the flower head onto a stick or a plastic knife as we have done. Finish it off with a pom pom in the center of the small wrapper.

Create lots and lots of these in assorted colors to create a beautiful flower bouquet.

Now time for the good stuff… FOOD! This dish can be made with shrimp, chicken or pork instead of tofu. Look for the more exotic items in the Asian foods section at your local grocery store. Adjust the pad Thai sauce ingredients to taste.



Sukhothai Pad Thai

Ingredients

1/2 cup white sugar
2 Tablespoons Lime
1/4 cup fish sauce
2 tablespoons tamarind pulp
1 (12 ounce) package dried rice noodles
1/2 cup peanut oil
1 1/2 teaspoons minced garlic
4 eggs
1 (12 ounce) package firm tofu, cut into 1/2 inch strips
1 1/2 tablespoons white sugar
1 1/2 teaspoons salt
1 1/2 cups chopped dry roasted unsalted peanuts
1 1/2 teaspoons ground, picked oriental radish
1/2 cup chopped fresh chives
1 teaspoon chili powder
2 cups fresh bean sprouts
1 teaspoon shrimp paste
1 lime, cut into wedges

Directions

To prepare Pad Thai sauce: In a medium saucepan over medium heat, blend sugar, fish sauce and tamarind pulp.

To make Pad Thai: Soak rice noodles in cold water until soft; drain. In a large skillet or wok over medium heat, warm oil and add garlic and eggs; scramble the eggs. Add tofu and stir until well mixed; add noodles and stir until cooked.

Stir in Pad Thai sauce, 1 1/2 tablespoons sugar and 1 1/2 teaspoons salt. Stir in peanuts, shrimp paste, and radish. Remove from heat and add chives and chili powder.

Serve with lime and bean sprouts on the side.
