HAPPY CINCO DE MAYO!

Hola Hi and Hello out there in blogland! How are you doing this morning? I’m not doing to spiffy today. This head cold allergy thing is really making me feel very blahzay! But I’ll just load myself with some cold pills and keep on truckin baby! So how what’s going on in your world?

Remember those centerpieces I told you I had to do awhile back? Well the lady came by last night asking for them and I had to get a little “firm” with her. I told her that she never brought her deposit by so I could make them and how an order like this (with such a large quantity) is NEVER made before a deposit. She got a little huffy but said she would bring it by today and that she wanted them by Thursday. Excuse me?? Uh no way, sorry… I have more important things to do than play graba$$ with this woman. I told her I don’t think I could do that and maybe she needed to look at premade centerpieces from a store. Then, I guess she was being “generous” and said what about Friday morning. I said no. What do these people think I am? Superman? When will people learn you can’t rush quality and expect the best… it doesn’t work like that! UGH! I was so frustrated!

So I came inside after talking to her and the landlord stops by to collect the rent and tell me he wants to extend my front porch. Um I don’t care about the porch, I need a new AC unit in the bedroom! So he said I would have to wait on the porch and he would try to get the AC put in this weekend. Didn’t I just tell him I didn’t care about the porch? What is wrong with these people?! YIKES! Or am I just that scatterbrained and hearing/imagining things?

So I closed the door to people and I turned on the Dancing with The Stars that I missed Monday night. Watched it and got caught up… and I was trimming my fresh green beans that I was making for dinner. Ok, Fresh green beans with baby new potatoes and mini hot links… YUM! I also started a HUGE pot of Chicken Tortilla Soup for my mom. Ok got that going… time to watch the results show. I was soooo hoping that Pamela Anderson would get the boot…. YAY! About this time I start feeling really weird that I am not at my mom’s helping her ya know? I ate dinner then tried to do some crafts but just couldn’t get into the mood. About 10pm the soup was ready, so I start putting them into containers so I could freeze them for mom. I finally got done with packaging and labeling about 11pm. I sat on the bed and crashed! And for some reason I had a very hard time getting up this morning… but here I am.

So what do you do when the mind wants to craft but the body says “don’t even think about it”? LOL… You craft anyway! With the end of the year approaching, some parents and children will be attending graduation. Some people spend boocoos of money on a simple thing as invitations. But why not save those hard earned dollars and make some instead?

Craft Idea of the Day: Handmade invitations

You can use printed scrapbooking paper, white cardstock, stickers, maybe even some pictures, and a nice marker to create a simply marvelous invitation to Graduation, birthdays, or just dinner at your house. A little imagination goes a long way and saves quite a bit. With handmade invitations, you have the chance to personalize them to yourself, your theme, or your guests. It’s a very versatile idea!

Ok, so here we sit making cards and invitations and we suddenly hear a growling in the pits of your stomach. It’s crying out for nourishment! Face it, those Fritos and Pepsi you may have had for breakfast just isn’t cutting it anymore LOL! You need food and you need it fast! Here is a delicious and satisfying meal you can make in about 15 minutes!

Chicken, Avocado and Provolone Wraps

Ingredients

2 cups shredded or chopped cooked chicken
1/2 cup chopped tomato
1/4 cup chopped cilantro
1/2 teaspoon hot pepper sauce
1 ripe avocado, peeled, pitted, diced
4 slices SARGENTO® Sliced Reduced Sodium Provolone Cheese
4 (8 inch) low sodium flour tortillas
4 leaves red leaf or boston lettuce

Directions

Combine chicken, tomato, cilantro and hot sauce in a medium bowl; toss well. Add avocado; toss again.
Arrange cheese over tortillas; top with lettuce leaves and chicken mixture. Roll up; cut diagonally in half.

So as my mom’s personal Home Health and Maid service, I shall put on my uniform and head out in a few minutes. (Yes she has “contracted” me if you will LOL.) I will probably stop on the way and grab a monster or something to help get me moving LOL! So you take care today and I will talk to you tomorrow! HUGS!

  1. Yum! Those wraps look good. When I get up and running I just might make me some of those. As far as invitations go, thats what I did for both my sons and my ex-daughter-in-law. And they liked them a lot. Frugality takes on all kinds of directions. All it takes is a little imagination.
